Vegan Gluten Free Corn Muffins

I'm using Pamela's Gluten Free Cornbread and Muffin Mix as the base. Add to it:
1/4 c. sugar
4 oz. unsweetened applesauce
3 Tbsp flax seeds, ground and mixed with 9 Tbsp water and set aside to thicken
1/4 to 1/2 c. coconut milk

Mix everything except the coconut milk, then drizzle that in until you have the right consistency. Cook according to the package directions.

Quite tasty! Half the sugar and no fat except what's in the coconut milk. Makes 12 muffins at 145 calories per muffin.

    Sounds nummy, I like Pamela's mixes. They always turn out well and taste decent.

    Change it up again. Used 2 Tbsp apple cider vinegar and 2 tsp of baking soda instead of the flax seed. Really made a big difference in the texture of the muffins. You wouldn't know they were gluten-free!
