Poached Eggs

This morning I poached two eggs in the instant pot. I used those little silicone cups on the trivet, 1 cup water in the bottom and sprayed the cups with a little olive oil spray before I put in the egg. Cooked with sealing, high pressure 3 minutes then quick release. I used them to top some leftover rice, chicken broth made in the IP, grated ginger, sliced green onion warmed up. Then topped with soy sauce and sriracha. Sort of a lazy man's congee. It was so good!
