Curry and Coconut Pumpkin Soup

OMG - I just made this recipe. DELICIOUS!!
I made a few changes. I used full fat coconut milk instead of light coconut milk and I left out the apples to reduce the carbs. Switched up the spice mixture just a bit based on what I had available.
I made it in my crock pot. It took about 5 minutes to put it together. So easy and so yummy! Plus, it made the house smell great!!

I made this recently and it was very good. I had to go a little easy with the chili flakes, though. I love the spicy, but my husband doesn't.0
