Bell's palsy

I just got Bell's palsy this week and am wondering if any other gluten free non insulin diabetics have idea for soft food. I usually eat lunch in the car for work. I am off for a few days but meet some ideas for car lunches, food falls out of my mouth and I have to take tiny bites. I also don't like yogurt, eating is a struggle and tiring. Eating is no fun. Any tips?

    What about rice or avocado toast? Cucumber and hummus?

    Shred or chop any veggies and add it to 'dips' like hummous or sour cream or cottage cheese or Greek yogourt (if you buy the good stuff it doesn't have that sour taste), GF deli meats can be rolled up and eaten little bites at a time, you could do a protein smoothie, devilled eggs, tuna/salmon salad.
