I saw that we could share our recipes here, so I'm going to share the amazing soup that I made today. Even my meat eating family members love it, and that's saying something!

You'll need:
2 tbs apple cider vinegar (or vegetable broth)
2 tsp smoked paprika
1 tsp cumin
1 tsp chipotle chili powder
1 tbs garlic powder
1 yellow onion
like 5 carrots idk i wasn't counting but it was a lot
4 stalks of celery
10 cups water or veggie broth or a mix i guess (i used water and it's good)
1 16 oz can of tomatoes (i used the ones with green chilis)
8 cups of chopped collard greens
1 normal-sized container of white mushrooms, chopped
1 cup dry red lentils
2 tbs soy sauce

Directions:
Chop all the veggies.
Throw the onion, celery, carrot, and spices in with the apple cider vinegar in a large pot over medium heat.
Sauté that stuff until the onions are kinda translucent.
Add in the rest of the ingredients, bring to a boil, and let simmer for at least an hour.
Boom. You have fantastic soup.

Nice! I'm going to try and make some of this; it sounds delicious. If you don't mind me asking, how many calories are in a cup?
