Should we share recipes? I think we should.
I'll start:
Taco salad:
1.5c romaine or iceberg lettuce -- 12 cal
15g shredded cheddar cheese -- 60 cal
1/4 avocado -- 40 cal
1/2 tomato -- 20 cal
A small handful (about 4-6 chips) of crushed tortilla chips--I use a local brand, La Cocina, and it's delicious! -- 60 cal
1 tbsp salsa, spiced to your liking -- 5 cal
1 tbsp sour cream -- 10 cal
Meat: Two options
1. Ground chicken/turkey with Old El Paso taco seasoning
2. Chicken breast cooked in a slow cooker with 1c. Salsa, 2 tbsp hot sauce (I use louisiana) and 1 packet taco seasoning.
50g of either is my perfect amount
(50-60 calories)
Please remember to weigh everything to ensure accuracy! That's how I make sure my counts are right
262 Calories | 17g Carb | 17g Fat | 18g Protein | 7g Fiber
(10g net carbs for the keto people, probably a bit high for that)
If you're like me, and would like to increase the protein count, just add more chicken. Increases calories too but it makes you full for a very long time!

This is a bit high on net carbs vs kcal for a single meal, but still doable for Keto. I think leaving out the tortilla chips could make it work well. And adding some butter or oil, perhaps. LOL. Thanks for sharing!1
