Smoked mackerel pate

2 plump fillets of smoked peppered mackerel
200g of cream cheese
Juice of half a lemon
2 x 1/2 tsps of paprika
Skin the fillets and break the mackerel into a food processor.
Add the cream cheese, juice of the lemon (to taste; add a bit, then adjust according to the flavour you favour)
and one of the 1/2 tsps of paprika.
Whizz until all mixed well and blended.
Transfer to a dish of your choice, smooth the surface and sprinkle on the other 1/2 tsp.
Garnish with a very thin half-slice of lemon, cut into half again, and laid on the pate like a little butterfly....
I could eat this by the forkful, but it's lovely with a green salad.....

I've never seen smoked mackerel here in the US, though I haven't explored specialty shops much. Do you think this would work well with sardines?0

I think it would work very well with any smoked/cooked fish; obviously, the flavour will be subtly different. But, hey - give it a try!

$11.99 for just 7oz seems an awful lot though... It's far less expensive here!
