I just discovered a new one tonight that I loved...
I made the Ranchero breakfast in the micro as directed, added a couple of tablespoons of Rotel and a wedge of Laughing Cow chipotle cheese and stirred it all up. I heated up a couple of La Tortilla Factory 50 cal. multigrain tortillas and made myself some pretty good immitation chilaquilas tacos.
Living in South Texas, that is the one thing I really miss the most -- diving in to some good Mexican food. These tacos turned out so much better than I expected, so they are going to be my go-to when hubby wants breakfast tacos!

I love the southwestern chicken baked in a red or yellow pepper with a piece of jalapeño laughing cow cheese in the middle. I also add Mexican hot sauce to it when it's done. That's the only way I can eat that dish.0
