Please Help: Rebalancing digestion after accidental gluten

Hi all. I have been gluten free for about six months now. I am not celiac, but after my celiac test came back negative I decided to try an elimination diet anyway, just to see, and felt a lot better, so I guess that makes me gluten intolerant/ gluten sensitive (or whatever... not really sure how to label myself).
Anyway, I've been doing pretty well gluten free. A few slip-ups, but nothing terrible, I never had too strong of a reaction if I did get a little accidental gluten (things like some soy sauce in a marinade, etc.). A little upset tummy or headache right afterwards, but gone within a few hours. Then, two weeks ago, I ate something that made me really sick - I think it was a tiny bit of gravy that got on some of my food. I felt okay that night, but was pretty sick the next day, and my stomach was super touchy for days after that.
Since then, no matter what I eat, my stomach has been really sensitive. Nothing major, but gurgly tummy, some nausea, lots of burping, etc. I don't know why all of the sudden I'm so sensitive again - this is the kind of digestive discomfort I used to get all the time when I was still eating gluten and haven't had in six months. Now I seem to get at least a little bit of it every time I eat, and it's been two weeks. I'm getting really worried because I'm traveling a lot in the next few weeks which means that I'll be less in control of my food (no way to cook for myself, long airplane flights, etc.), and I'm already super sensitive to everything I eat.
Has anybody been through this before? Is there anything I can do to help my digestion get back on track, other than just staying far away from gluten and waiting it out? When I cut out gluten I felt so much better within just a week or so, and I don't know why now, with just a teensy bit, my whole system feels off for weeks. I just want to go back to feeling healthy and balanced and not sick all the time!

I think that a lot of people find they are more sensitive after giving gluten up than they were when they consumed it regularly. If it's gluten, all you can really do is let your body recover. I avoid eating large amounts of vegetables, raw vegetables, some fruits, and grains in general, when I've accidentally had gluten. It doesn't make me feel better, but it keeps me from feeling even worse.
But if you don't feel better, do see your doctor. It sounds like you're serious about not eating gluten, and even though it seems like it was something you ate, there is always the possibility that you've caught a bug, or have some other medical issue going on that might require treatment.0
