Eat More Vegetables Challenge!

A personal challenge I'm working on this month is increasing how many veggies I eat, and I thought maybe some other people here would like to do the same thing. So I thought we could discuss it in this thread: daily check-ins, share helpful tips & recipes, etc.

I'll start off. Before now, I've probably been averaging about 3 servings of veggies/day, and I'd like to increase that to at least 5 servings/day.
August 1: 6 servings
August 2: 7 servings
My favorite go-to veggies: low sodium vegetable juice, raw carrots, cooked spinach, raw shredded broccoli, microwaved sweet potato. I've also started adding a little seaweed about every other day (not enough for a serving, I think) for iodine.
Today I chopped up a zucchini and microwaved it with some marinara--yummy!
I can be bad about always buying the same veggies all the time. I need to start adding in more seasonal produce. Anyone know what's especially in season this week?0 -

I'm not big on veggies (thus, my participation in this thread), so I don't have any go-to suggestions.

I´m trying to increase my intake of veggies as well - during summer, I just love green/red/yellow bell peppers, tomatoes, cucumber and zucchini, I usually eat them raw, just chopped into small pieces, and as an addition to my breakfast or with grilled salmon or whatever I eat during the day.0 -
We went through a phase where we really loaded down our homemade pizza with *all the bell peppers*. We've since moved on to other toppings and haven't bought them recently. Have to remember I can just slice them into long strips for fun finger food!
I usually have my fresh tomatoes and cucumber in sandwiches. Just whole wheat bread spread with hummus and lots of thinly sliced veggies.
I like most veggies raw, but zucchini is my least favorite, though I loved it cooked.0 -

Hit up the crudite tray at the family get-together. Was sent home with two extra stalks of celery. Anyone have good ideas on what to do with so much celery? Currently we add it raw to salads and to beans when cooking.0 -

August 4: 5 servings. Not much else healthy, but I did get the veggies in!
Was looking at the sale paper today, and they have lettuce and other salad greens on sale. *looks at uneaten bagged salad from last grocery trip* I don't know, I'm just not that fond of salads. It also mentioned hatch peppers, how hot are those?0 -

I put celery in with carrot juice using a good juicer. Can put an apple in there as well.
If you can take the calories and need protein, put peanut butter on it.0 -
Thanks for the celery idea, Lydia. Makes me wish I had a juicer, because now I'm wondering what celery juice tastes like!

Had Brussels sprouts at lunch, so yummy! I should eat them more often.0 -

OK Twist my arm.. :-) (A very smart "mini" challenge" by the way!
I want to get to where I am eating Veggies 2-3 times a day instead of once per day.
To do that:
1. Salad every day
2. Snack of Raw veggies
3. Veggies as side for meal without salad.

We're having some work done on the house which will require shutting off the electricity. So we've been trying to eat as much food from the refrigerator as possible. The only produce I bought this week was broccoli slaw. Bought a lot of canned veggies to last us for the duration.0 -

LOL - It is one of my favorite vegetable medleys.

As I've said before, I'm not that fond of salads, but the house salad was redeemed by perfectly ripe tomato slices and a yummy tomato dressing.0 -
