low carb blinis

tonight dinner was low carb blinis made with almond flour. they are sooo good, I wanted to share the recipe. I used the blini recipe from ketodietapp, but then topped with creme fraiche and caviar. actually, I made a double batch and split with hubby, since the whole batch was only 10.8g net carbs it still fit within our macros. one of my best dinners. filled out dinner with a couple assorted cheeses and some salami.

1/2 cup + 1 tbsp almond flour (58 g/ 2 oz)
1/2 tsp gluten-free baking powder
pinch of pink Himalayan salt
2 large eggs (separated, whip whites)
3 tbsp unsweetened almond milk (45 ml)
1 tbsp butter, melted (15 ml)
mix all other ingredients, fold into whites. cook by teaspoon scoops for little bite-sized blinis. So cute! took much longer than 50 seconds each. 1 tbsp extra virgin olive oil or ghee (add a little at a time while cooking)
Nutritional values (per serving, 4 blinis)
Total Carbs 4.5 grams
Fiber 1.8 grams
Net Carbs 2.7 grams full batch 10.8g
Protein 15.6 grams
Fat 25.2 grams
of which Saturated 8.6 grams
Calories 289 kcal
Magnesium 54 mg (14% RDA)
Potassium 245 mg (12% EMR)
