How easy and difficult has it been for you to start on keto?

Hardest part: Having to eat so much, I just realized that I haven't been reaching the minimum amount of kcal a day and I'm kind of sedentary having to spend so many hours in front of the computer.
I've been a Coke junkie since I was a child, it feels like those people trying to stop smoking. But hey, more than one week without drinking the stuff!
Most recipes contain dairy and I'm dairy intolerant.
Easiest part: I like all kinds of foods as long as they are not ultra-processed or junk food, and since I'm intolerant to some kind of foods (dairy, wheat, alcohol) I'm used to not eating things I shouldn't.
I worked in restaurants for several years, I'm not afraid of using a knife to cook meals from scratch or to improvise.

Difficult part: I obsess on checking the scale and measuring my ketone levels as I did not lose much in the first week of keto, which is when I realised that I should probably go stricter on carbs (even with veggies and fruits). Eating minimal veggies and fruits makes me feel like I will get bored with this diet in the long run and start eating more veggies.
Easy part: Since I am a non-vegetarian and love to cook, I can come up with new dishes almost every alternate week. I also am non-tolerant to dairy and gluten and not a big fan of sweetening things so reducing on the obvious carb foods was not difficult. I feel lighter even though I haven't lost much technically. I also feel physically and mentally active.0
