You can all set these up for your county. A good space to share.
I took a walk along the Seven Sisters trail - awesome, beautiful day for it, pretty much flat all the way, even in the rain it wouldn't be a bad walk. If you haven't tried it is worth a half day out / full day with a picnic on the beach.
You can also hire bikes there if that is your thing, didn't check how much they cost - sorry

Not sure where you went but I live right near there and not sure which part you mean as not flat from Birling Gap to Eastbourne nor from Birling gap to Cuckmere Haven or Seaford. The sponsored walks regard this as the most challenging part of the course as well lots of up and down the cliffs. Also don't know where you can hire a bike any more and it's tough going. The beach access at Birling Gap has just been closed due to cliff falls. Come to Seaford be do have a flat beach side walk along Vanguard Way!0

I came to Seaford for the Christmas Market, it was... erm... interesting. A nice walk around the seafront though.0
