Quark in the Instant Pot?

Weird question, but has anyone tried making quark in the instant pot? I have never heard of this before, but found it used in a recipe. After digging around, it appears that instead of milk (like in yogurt), you use buttermilk instead.
Does anyone know what it tastes like, what it is used for, and have you tried making it in the Instant pot? I am always up for new things, and this may be my next try as I make yogurt once a week and was thinking of adding this to my weekly prep.
