Cinnamon "Apples" (Low Cal/Low Carb)

I use zucchini as a replacement for pasta (julienned for spaghetti type noodles, long thin strips for linguine or lasagna noodles). It has such a mild flavor of its own that you can use it as a savory or dessert base.

In this recipe (I found it online), the texture is so similar to baked apple. It tastes like apple pie without the crust!!



Cinnamon “Apples”
Serves 2

Ingredients:
• 1 medium zucchini, peeled and sliced
• 2 Tbsp butter
• 1/4 teaspoon blackstrap molasses
• 1-2 packets Truvia/Splenda (to taste)
• 1 Tbsp lemon juice
• 1 teaspoon cinnamon


Directions:
1. Slice zucchini into slices.
2. Heat butter in skillet.
3. Add zucchini slices and cook a few minutes until until tender.
4. Mix the rest of the ingredients and add to the zucchini.
5. Cook and stir for another 5 minutes.
6. Serve warm.

Great with ice cream or whipped cream on top.
Approximately 4g carbs per serving.
