I love a healthy dish that I can pull out when I want to feel like I'm having a treat.

I love making veggie burritos - lots of seasoned roasted veggies, beans, avocado, sometimes scrambled eggs or a fried egg with a perfectly jammy yolk. Then grill the finished burrito in a pan to make the tortilla nice and crispy.
Easy to make, quick if you've already prepped the ingredients, nourishing and delish!1 -
It's a lot of work but brown rice mushroom risotto is my decadent "go to". I've done the veggie burritos too, and I agree grilling the wrapped burrito at the end is definitely the trick that makes it incredible!1
