NO BUN EGGS BENEDICT

The recipe replaces the classic English muffin with an oven-fried green tomato

1 egg white, Egg White
2.25 oz, Pork Rinds, finely ground
1 tbsp(s), Cornstarch
4 large, Egg
4 slice, Canadian Brand Ham
1 Tomato, Green Tomato (Large)
8 Tbsp, Hollandaise Sauce Mix

Cut the green tomato into 4, 1/2" thick slices.
Mix the egg white with 1 tbsp water and whisk until frothy.
Dip each slice of the tomato into the egg white and then lay in the pork rinds, pushing them into the tomato on both sides to adhere.
Place on a lightly oiled cooking rack and into a tray to catch any crumbs.
Bake in the oven on 400 until crispy and golden (around 15 minutes or so) flip and cook on the other side.
In the meantime, prepare your hollandaise as per package directions (I use McCormicks). Any remaining sauce can be kept for something else if you like.
Set aside, covered.
Poach your four eggs.
Warm your ham slices of a few seconds in a non-stick pan.

Assembly:
Lay the tomato on your plate.
Place ham on top of it.
Followed by the poached egg and then the hollandaise.

The carb count is low enough to enjoy a slice of multigrain toast (Aldis Fit and Active is best) with a little spread of Brummel and Brown Yogurt spread.
