These look more like Southern Biscuits than anything else I've tried
80 grams of butter (grated and put back in the fridge or freezer) (
200 grams of almond flour
100 grams powdered buttermilk
4 grams xanthan gum
1 gram sea salt
4 grams of baking powder
WHISK THE ABOVE TOGETHER
2 large eggs with whites and yolks separated
60 ml buttermilk
Whisk whites to stiff peaks.
Whisk togehter the yolks and buttermilk
Cut butter into dry ingredients.
Add yolk/buttermilk mixture to the dry
Fold in the egg whites
Pat into a rectangular shape around 1 1/2 inches high
Refrigerate until the block is solid
Cut into 8 squares
Bake at 410 for 10 minutes or until browned
