What's your nutrition plan? Meal prep ideas?

Hola! First post here.
My name is Juan and I got sleeved on July 2018, HW 262, LW 135, CW 146. 5'6". I'm not concerned about gaining or losing weight anymore, but I'm having some struggle finding how to balance my nutrition now I can eat a bit more than what I used to some months ago. I particularly find somewhat difficult to come up with meal recipe ideas for cooking and meal prepping in a regular fashion. I live alone and when I cook I feel I end up wasting food that spoils before I get to eat it, or it gets freezer burned. I just got back to MFP to track what I eat and thought maybe I could find some help here in the forums.
Any tips, strategies or ideas? What are you go-to recipes? How do you manage your meals during the day and portion sizes?
What works for me is eating every 2-3 hours, and I don't make much of a difference between meals and snacks, as they end up being more or less the same caloric amount. I'm hitting my protein and water goals, but I'd like to have more variety and vegetables in my diet.
