- 4 cups raw cauliflower
- 2 slices thick-sliced bacon
- 1/4 medium onion diced
- 1 clove minced garlic
- 3/4 cup Cheddar Cheese
- 1 oz smoked gouda
- 1 oz cream cheese
- 1 cup heavy whipping cream
- 1/4 crushed pork rinds
- 1/2 tbsp butter
- Cut up cauliflower into macaroni sized pieces.
- Place in bowl with 1/4 cup water, cover with plastic wrap, place in microwave for 5-8 minutes (depending on wattage), and steam.
- Remove from microwave and carefully unwrap.
- Drain.
- While it's draining and cooling, cook your bacon until it's crispy.
- Set aside on a paper towel.
- In the same grease, cook the onions until translucent.
- Add the garlic and saute for 30 seconds.
- Remove both and drain grease off.
- Put the cauliflower into the pot, add the onion mixture, and stir.
- Add in the cream and cheese and stir on medium heat until melted.
- Turn down the heat and put in the bacon.
- Use the butter to prep a casserole (8x8 or so will do).
- Pour in the cauliflower mixture.
- Top with crushed rinds and some butter.
- Bake covered at 350 for 20 minutes and uncovered for an additional 10 minutes.
- Let it sit for about 12 minutes before serving.
