KETO MAC N CHEESE

  • 4 cups raw cauliflower
  • 2 slices thick-sliced bacon
  • 1/4 medium onion diced
  • 1 clove minced garlic
  • 3/4 cup Cheddar Cheese
  • 1 oz smoked gouda
  • 1 oz cream cheese
  • 1 cup heavy whipping cream
  • 1/4 crushed pork rinds
  • 1/2 tbsp butter
  1. Cut up cauliflower into macaroni sized pieces.
  2. Place in bowl with 1/4 cup water, cover with plastic wrap, place in microwave for 5-8 minutes (depending on wattage), and steam.
  3. Remove from microwave and carefully unwrap.
  4. Drain.
  5. While it's draining and cooling, cook your bacon until it's crispy.
  6. Set aside on a paper towel.
  7. In the same grease, cook the onions until translucent.
  8. Add the garlic and saute for 30 seconds.
  9. Remove both and drain grease off.
  10. Put the cauliflower into the pot, add the onion mixture, and stir.
  11. Add in the cream and cheese and stir on medium heat until melted.
  12. Turn down the heat and put in the bacon.
  13. Use the butter to prep a casserole (8x8 or so will do).
  14. Pour in the cauliflower mixture.
  15. Top with crushed rinds and some butter.
  16. Bake covered at 350 for 20 minutes and uncovered for an additional 10 minutes.
  17. Let it sit for about 12 minutes before serving.
Serves 4 at net carb of 3 or total carb of 6, 461 calories per serving
