Garden Harvest
So today I got to enjoy a tomato. I'm sure that sounds a bit silly, but I don't do a lot of tomato on keto.
This was a fresh, perfectly ripened tomato which I sliced and arranged onto a few layers of paper towels, salted each side and let sit while I got a couple other things ready for a small, simple lunchtime meal (peeled some boiled eggs and cubed up some cheeses). I also plucked some basil leaves before setting down to eat it all. The salt and paper towel arrangement was to draw out excess moisture from the tomato and make the flavor pop.
Those tomato slices were so good! Words don't do it justice! Whether with or without a basil leaf, or cheese, or even egg, it was just fabulous! Such is the wonder of a tomato sometimes!
So I recalled how well a recent thread about what we were eating went over, and thought I would ask what people are doing with their freggies? Be they grown in your own garden or out of the freezer. I'm just curious what amazing things this incredible group of people is doing with their freggies? Even if you're not eating any today (you can always eat more tomorrow) what's your favorite freggie recipe that you wish to share?9 -
I am excited to see these, as vegetables comprise the bulk of my calories! I hope to find some new ideas...low calorie ones without olive oil.1

I use to think i had lot of muscle under all the fluff, turns out that was a nope, LMAO so my winter goal will be to build muscle mass. I changed me weight goal to 140 due to still having fluff, not a lot, but wiggly skin section.. hopefully I can fill it up with muscle! !

so I am pretty much a lazy shortcut kind of person... (shhhh I hide it well) but with working and riding and such I have found that meal prep is HUGE. So. I pay a little more at the grocery perhaps but I get those pre cut bags and containers of broccoli/cauli, baby spinach, precut melon or other fruits depending on what is on display.
For lunch I typically prepare 2 or 3 meals using 1 of 2 bags of the broc/cauli in the microwave mixed with some frozen dinner that by itself would be way over cals or sodium but when split 2 or 3 portions it goes nicely on top of the veggies. I will premix the cut fruit into multiple servings, and now they sell a nice melon ball frozen mix also. So I would love to say that I get all my fruits and veggies from my garden but that's NOT gonna happen. In the afternoons I have cut up apples and carrots which bandit and I share. Ok he gets MOST of them but the baby carrots are a great snack on the way to the barn.
Dinner I use the baby spinach as a base for a large salad and the only thing to watch with that is the dressing you pick and the amount you use can go a long way.
Overall I think the biggest thing is the preparation and making several servings at one time. Easy to log and easy to mix it up just a little with adding a few other ingredients.8 -
I like making caprese salad (tomato, fresh mozzarella, basil, olive oil, salt & pepper; sometimes just by itself or on top of a ryvita and sometimes with avocado.
I also love just roasting veggies: aubergine, courgettes, anything really.
My absolute favourite though is a beet salad with quartered beets, salad leaves, peppers, feta and seeds. 😋

I think oven roasted vegetables are the best. It's amazing how much better they taste just with a bit of olive oil and perhaps some spices or fresh herbs when I have them on hand. Growing up eating iceberg lettuce/celery/carrot salads (we only got tomatoes when they were in season back then) and canned vegetables I always hated vegetables until I figured out how to properly prepare them. Strangely I liked canned beets and corn but not green beans, spinach, peas, etc.
I'm lazy so I also tend to buy the prewashed prepackaged vegetables. I also like to buy the salad kits though I prefer organic since the dressings tend to have less garbage in them. I kind of OD'd on them recently though so this week it's been tomatoes and something green (zucchini, broccoli, spinach and cabbage). Lately I'm buying only cherry tomatoes as they have so much more flavor.
In the winter I do things like carrot/parsnip mash, kale/potato soup, ramen or stir fry w/mushrooms, snow or snap peas, bok choi, etc. I tend to add onion (and sometimes garlic) to most root vegetable mashes to make them less sweet. Instead in the summer it's primarily salads of all types. I recently played with fresh kimchi using cucumber, daikon, cabbage, onion and carrot .. not all at the same time. They were all good but I especially liked the cucumber.
On the whole I think Asian vegetable dishes are some of the most flavorful. Some of the vegetables I barely tolerate as a sauté are so good when oven fried or put in a stir fry.
I think most people like fruit but vegetables are more difficult. I don't know about the UK or Australia but I have to say most American vegetable dishes are lacking. I recommend experimenting with various vegetable and salad recipes of other countries.6 -
I know not everyone here has to adhere to a low calorie diet, but for those looking for ideas with a lot of bulk for the calories, here are some of the things I am eating:
The great thing about all of dishes is that if you have a large appetite like I do you can eat until you are full and it is hard to get 300 calories, IF you stay away from the oil.
The other day I was gifted a couple of cabbages and was determined to use them somehow rather than bowl them into the woods, which was my first inclination. I ended up shredding the whole head (minus core) and put it in a huge pan with some Pam. I cooked it on high heat until it was browned and softened and then added a can of Rotel tomatoes with chilis. It was delicious! I am having it with the other head tonight and really looking forward to it!
I shred a huge zucchini and add 2 beaten eggs and bake it up, then top it with a little mozzarella and salsa.
I regularly make an Indian inspired stew. I start with cubed eggplant then add what ever I have--peppers, onions, mushrooms, zucchini, carrots. That gets cooked up some with Pam and garlic until it is softened some. Then I add canned tomatoes, chickpeas and a ton of spices like curry, turmeric, paprika, etc. and throw it in the oven to bake down.
I take a big bag of spinach and cook it down--it requires no oil. Then at stir in a can of Rotel tomatoes and top it with some mozzarella.
I roast a lot of carrots and brussell sprouts. I have found that if I throw them in a zip lock bag and shake it I can get away with as little as a teaspoon of oil per pound.
I make a salad of diced cucumber, tomato, and red onion and fresh mint then marinate it in balsamic vinegar. (no oil lol). Sometimes I add chickpeas and/or feta cheese.
I make massive salads with greens and other low cal veggies like bell peppers, onions, cucumbers, and grape tomatoes. I can get away with 1 tablespoon of lite vinaigrette(25 calories) for a mixing bowl serving. I have recently discovered that adding a clementine is a real flavor booster!

I love vegetables. I have an allotment and recently my favourite thing to do is to share a cucumber with my 4 year old on the journey home from said allotment. Such a lovely tradition7 -

Less exercise than usual today – missed the bike ride as I took my mum to a hospital appointment this morning. She would get there by herself (she still drives) but it’s an eye treatment and her vision is impaired for a few hours afterwards. However, I did still get some cardio done and I vacuumed and washed the car.
I don’t grow my own veggies but I buy fresh veg locally. I am trying to be more aware of environmental issues such as air miles and buy mostly local grown veg but it can be difficult especially in winter.
I have lots of salad for lunches, and then with dinner I have my veg steamed, roast or stir fried depending what meat/fish I’m having. I eat anything except spinach (it disagrees with me). A good vegetable curry is great way to use up odds and ends.
Fruit is more difficult to find UK grown – I love melons, satsumas, grapes, plums ….. all fruit.

Sweet peppers-mostly in the sauce, some chopped and frozen for in stuff later
Cucumbers-ate enough to float a boat, made 36 pints zippy relish, 24 pints regular relish
Strawberries, blackberries, raspberries-ate some, froze the rest for eating and making jam later in the fall/winter
Tomatillos-frozen for Turkey Pozole Soup to be made later this fall/winter for canning
Jalapeño/poblano peppers-59 pre-made poppers, frozen, ate a bunch of freshly made poppers, the rest canned for later use
Yellow squash/zucchini-eaten lightly grilled, almost daily until they got buggified. 2nd crop just coming on

I tracked logged and did a short walk and some flexibility work.
Veggies fresh Roma tomatoes from the garden with a little bit of salad dressing yum we also grow eggplant a variety of peppers and spaghetti squash those are my hubby’s last times I grew about 15 lbs of red and Yukon gold potato’s. Sometimes we grill them with olive oil or put a little cheese in the jalapeños and grill them oh do good. Apples are a NY state staple and we have several
local orchards around us.6 -

For years my favorite way to eat veggies was to steam them and add my homemade salsa on top. I eventually got tired of it. I enjoy making big salads most days with mixed greens, cucumber, lots of tomato, sometimes red pepper, croutons ( which I crush so it seems like more flavor throughout the salad) and 2 tablespoons of Bolthouse cucumber ranch dressing. I’m taking a break from balsamic vinaigrette even though the olive oil helps you absorb the nutrients. I LOVE baked sweet potatoes made in the air fryer and also sautéed zucchini, squash, onion combo.

I love soups and make lots of different varieties in my instant pot or on the stove top. I use many vegetables in the soups and rarely throw any veggies away any more! I include quite a few that my family doesn’t normally prefer, but they love when included in a soup: leeks, kale, turnip, mushrooms, parsnips, etc. I also love to sauté veggies in my wok basket on the barbeque, and got an air fryer earlier in the summer that has been a godsend for roasting vegetables with minimal oil while keeping the house cool.

My immune system is going a wee bit wild in response to the third vaccine, but I have had two amazing nights of sleep in a row (plus a long nap this afternoon as I was wiped).

@cherie8525 Congratulations!
Pumpkin spice season started already so I have been enjoying a lot of butternut squash lately. I season them with ginger, cinnamon or pumpkin spice, cumin, brown sugar but the erythritol kind, salt, cooking spray ghee flavor, and sometimes I'll add a tiny bit of cayenne pepper too. I'll put them in the microwave just for a few minutes to start making them soft ( basically to speed up the process) and then I put them in the air fryer. These are so good, it's almost like a dessert.
