Stir-fry with broccoli & brown rice (serves 2)
Sorry it's in grams I'm English lol.
Ingredients
> 200g trimmed broccoli florets, halved
> 300g diced chicken
> 15g shredded ginger
> 2 shredded garlic cloves (unless you're garlic mad like me, then go nuts :P)
> 1 red onion, sliced
> 1 roasted red pepper, sliced (from a jar or roast your own)
> 1-2 tbs olive oil
> 1 tsp chilli powder
> 1 tbs soy sauce
> 1 tbs honey
> cooked brown rice
Method
STEP 1
In a medium pan, pour boiling water over the broccoli then boil for 4 mins.
STEP 2
Heat the olive oil in a non-stick wok and cook chicken on high 2 mins, stirring. And the ginger, garlic and onion for 2 mins, add the chilli powder and stir briefly. Drain the broccoli and reserve the water. Tip the broccoli into the wok with the soy, honey, red pepper and 4 tbsp broccoli water then cook until heated through. Meanwhile, heat the rice following the pack instructions and serve with the stir-fry.

Cheesy Cabbage Casserole
Ingredients
1 pound ground beef or turkey, browned and drained
1 small onion, diced
1/2 head of cabbage chopped into medium chunks (roughly 3 cups)
1 (10 ounce) can tomatoes with green chilies (undrained)
1 (8 ounce) can of tomato sauce
1 teaspoon chili powder
1 teaspoon garlic powder
salt and pepper to taste
1 cup shredded cheese
Instructions
In a medium size skillet brown your beef or turkey over medium heat, drain off any grease.
Add the diced onion and sauté 3-5 minutes.
Add the cabbage, tomatoes with green chili, tomato sauce, spices and stir well.
Cover and reduce heat to medium cooking for 15-18 minutes stirring occasionally.
Top with cheese!

Crockpot Chicken Taco Soup
Ingredients:
2 cups reduced-sodium chicken broth
2 cups of water
1 cup Rotel diced tomatoes with green chilies
1 teaspoon reduced-sodium taco seasoning mix
1/2 teaspoon cumin
1/4 teaspoon chili powder
1 clove garlic, minced
13-14 oz raw chicken breasts - should yield 9 oz cooked
2 cups cabbage, chopped (May need more because of shrinkage)
2 oz Kraft 2% Mexican Cheese to garnish
Directions:
Combine chicken broth, water, diced tomatoes, taco seasoning, cumin, chili powder, garlic, cabbage, and chicken in a crockpot. Cook on low for 6 to 8 hours or on high 3 to 4 hours. Shred chicken breasts in crockpot before serving. Pour soup into bowls and top with cheese.0
