Congrats on the closing, Skip! BTW, you look pretty thin in the photo, good, but definitely thin and hopefully staying that way on purpose. Assuming your esophageal issues have been completely resolved.

How did the ribs turn out, Dave? Do you sauce 'em or serve with sauce on the side?

The ribs were perhaps the best I have ever done. I dry rub them a few hours before they go in the smoker. Smoked them three hours at 250, then wrapped in foil and kept them in for two hours. Finally took off the foil, brushed them with sauce, and left them in the smoker at 260 for a final hour, to build a nice crust. They were great. Rita baked a spectacular German chocolate cake, too. Not a good dinner for watching calories.
Cleaning the smoker this morning, then have several honey-dos to get to.0 -

So by my math, that's 9 hours start to finish on those ribs. I don't know that I have the patience for something like that unless I was hosting a party and cooking a rack of dinosaur ribs. I'd have to see if dinosaurs are kosher though. Anybody know if Fred Flintstone was Jewish? That could save me some Googling.

Definitely not kosher, Lou, as it was pork. Only six hours in the smoker and I didn't have to spend much time working with them. For the first three hours, I went out and sprayed them with a little cider vinegar, every half hour, or so, and I added some damp, cherry wood savings for smoke after a couple hours.1
