Marilyn, how are things going getting prepared for dialysis? How are you feeling?
Out with my walking group after work. Pretty rainy and cold so we had half the number as last week but it was fun. I did get in two more walks this past week plus two strength classes and will keep it up.
Food was good today...

D - big ol' salad (lettuce, pickled red onion, grapes, roasted mini-peppers, tomato, chickpeas, tahini)
Might have an apple and a few pistachios if I'm still hungry in a bit.
Thinking I may have to skip strength class tomorrow and do something on my own later in the evening. I'm really swamped with work still so it will depend on if I can get out of the office on time.

Yum to tofu scramble. I am using Vegan Blueberry's Mix*. Make up a batch and save in an airtight container.

Last Friday, at PT, doing some kind of strengthening exercise for my butt and core, I pulled something. Been out of commission since Saturday Morning when it showed up. I have been using heat, one of those microwave thingy, and it is getting better...but totally has slowed me down.

Worked late but made it to a strength class with minutes to spare. Totally wasn't feeling it but I managed to get through. I'm going to bed soon.

It is so late that I just didn't want to deal with eating my way through a huge salad tonight. I think I'll take one for lunch tomorrow. If it takes an hour to eat it at work so be it. Oh, and I totally overdosed on pistachios last night. They are gone and won't buy more. LOL
The soraya bowls are pretty good and no oil but do use white rice. They are good in a pinch so I keep them in the office for when I forget to bring lunch, along with some Dr. McDougall soups. And I always have fruit and wasa crackers at the office so I'm (relatively) safe from the dreaded snack cabinet.

White Rice. I love it. I don't apologize for it. I just eat it. As the adorable Cheap Lazy Vegan, Rose, says...Rice is Life...especially WHITE rice. I wanted to love brown rice but do not enjoy it as much. There is something so wonderful about the fragrant smell of jasmine rice cooking.
With that being said, I just have not perfected cooking brown rice. It is one of those vegan staples that is so cheap to make a big batch and freeze in little containers...I've got white rice down to a science...maybe I just need to try harder with brown rice...but until then, there's this:

Up, doing laundry...my sleep is just a mess. Also, planning my menu for today. My hip/butt is getting better but still off. PT tried a bit of massage on it yesterday...but it feels like needles in there. He thought it odd since he said that sounds more like a nerve than a muscle situation. I'm sitting here with the microwave heat pad on my butt.
Ok, so the menu...I keep putting the tofu scramble down, but the last two days my burrito bowl was so big, that I ate it for lunch and dinner. Finished all the prep for the bowl, NOW, I will make a big batch of tofu scramble, featuring bell peppers, onions, and loads of spinach.Spinach and beans (greens and beans) really keep me "regular". I need to eat them daily, just like Dr. Gregor says to do.

I just got caught up on everyone's posts.
Magic = about white rice all I can say is in Japan they ate a lot and they are thin. If you love Jasmine rice then go for it. I have used a rice cooker for years as I always...always burned rice. One thing I want to start doing again....in Japanese breakfasts always include a small mixed green salad. I was in that habit for a while. It was typical to have a rectangle folded omelet with a small salad with sesame dressing. Sounds weird but it was delicious. I quit the sesame dressing as it has gluten. Maybe I should make my own.
Mihani - I just got the Land's End new catalog...a ton of cute board shorts for swimming!

Spring cleaning as I want the house extra clean before surgery.
Oh, good news on the anemia...since I started chewable easy to absorb iron my ferritin level is stable so no iron infusions this month. Yay!!!
I am going to a Card demonstrator training event this Saturday. I need to make 10 cards to trade with other people using this years materials from Stampin up catalog. It took me all day to design a card that will be easy to replicate and not too busy. One down, 9 to go.

I like both white and brown rice but prefer brown rice most of the time. Lundberg makes a brown jasmine rice that is really good.
Hope you were able to get a nap in, Nanc. I'm still not seeing your smileys which makes me sad because they are so cute. There's just a file name .gif where you have them.

Donna, I add chopped greens to my oats in the mornings so it's "sort of" salad for breakfast. LOL

Love the card! But had to laugh at "easy to replicate" ... for someone who is not crafts-challenged maybe. I would make a real mess of it.
Got in almost 2 miles tonight on the treadmill. Turned cold again but supposed to stay in the 70's tomorrow through the next week. Finally! I'll be complaining about how hot it is in no time.

I switched to hemp milk a couple weeks ago. I seem to get tired of plant milk pretty quickly so I'm always switching around.

Oh no! Sorry to hear about the pulled muscle, Nanc. I am behind on posts so I'm glad to hear that you're already getting better. I hope the steak restaurant goes better than you're anticipating.

We have finally come to accept that we are never going to get on top of the landscaping maintenance on this property by ourselves. We are getting estimates for an overall cleanup and then weekly maintenance. Joe and I are both pretty excited about getting this place perked back up and everything trimmed. And to spend our time outside doing what we want to instead of always trying to catch up on the mowing and weeding.
We will still mow the perimeter of the field and do the vegetable gardening.
I got in just over 3 miles walking today. I am trying to do at least 3 every day this week.
We had a fajita bowl tonight with roasted veggies, greens and beans. hey greens-beans-onions-mushrooms-berries-seeds/nuts I got my gbombs today! and I wasn't even trying. That's a nice meal to bring into the rotation at this time of year.

Nice walk Carla!!! Are you walking with dogs? I gave up on walking for exercise as Charlie Bear is walking slow (until he sees a squirrel or a cat) and he thinks he needs to leave calling cards on all trees. In fairness it is getting into 80's here and humid. I need to have his coat clipped off. He will look like a frenchie with his little fat bum. He still encourages me in the morning to ride my Peleton bike. It is so cute how he waits for me and watches me. Cleo even though she is older can walk forever.
Mihani - I remember having a breakfast bowl in Canada with oats, spinach and fruit...it was unique and delicious!
Met with a new ENT Dr. as the one I have and love is PCS'ing to Alaska. The new Dr. does not want to do a Cochlear implant on my ear that I lost hearing (yet). I say yay as one less surgery for now. I am having cataracts removed and having the trifocal lens inserted. Brooks, who has worn coke bottle glasses since he was 6 had the surgery last month by same surgeon and he does not need glasses for distance or reading. BUT HE STILL DOES NOT SEE THE DUST OR DEBRI THE DOGS BRING INTO THE HOUSE!!!
I made an easy veggie bowl yesterday...to tired to cook. Had a bag of Seeds of Change (quinoa/brown rice). added roasted brussel sprouts from night before, red pepper, onion, walnuts, olives and baby lettuce. Brooks had 2 bowls after swimming so no left overs.
5 cards down and 6 to go for weekend Demo workshop. I don't really like the card...not my style but only thing I could come up with that follows the rules.

Carla, yes that was our second group walk. We're doing a mile this week but when I'm walking on my own I go 2 miles. A mile is only 15 to 20 minutes though, and reminded me I really can get some walking in every day. The nice thing is it is getting walking back into my brain as a must-do and I'm enjoying it.
The audio books are great to keep my mind occupied with something other than dwelling on work and what I need to get done. I think the stress-reduction benefit might be as good for me as the physical.
That is great you are hiring some help for the property. I have a guy who mows and trims every week because I just don't enjoy doing it myself anymore and I'm working so much. I have enough to do just halfway keeping the house presentable.
Donna I had to google PCS to figure out what that was. My doc said I have the beginnings of cataracts so that will be in my future as well. I am SO freaked out by anything to do with my eyes but I have worn glasses or contacts my entire life and not having to wear them all the time sounds pretty sweet.
Got 2 miles in last night. I worked too late to get to a strength class but it was a beautiful evening and the walk was nice. Got through 3 chapters of an audio book.
Yesterday and today the menu is oats with all the goodies for breakfast, salad for lunch. Last night I just had a bowl of Uncle Sam's cereal topped with a little granola and hemp milk. Tonight I'm meeting up with friends so I'll have a martini (maybe) and a salad. If I can resist the martini then I could get another walk in when I get home.

The 3 miles a day is mostly from walking outside right now. The dogs explore and run around loose in the field while I walk the perimeter at my own pace. I've been doing some spring cleaning that adds to that via extra steps on my fitbit.
Nice job at balance, Mihani. Getting in social time and a lot of exercise. Soon I'll be a part of that social time, for a day anyway! Excited for that.
There is a lot of cleanup to be done around this yard! And I don't mean around the property, just around the front and back yard. The yard is about an acre and a half of grass and mulched beds. We are going to get an initial cleanup done and then maintenance. The first estimate for cleanup is a bit jaw dropping. I mean we kind of knew it would be bad. They estimated that it would take 80 yards of mulch to do the beds. That is a LOT of mulch.
I think we'll end up doing the big cleanup through one company, and then going with a different company for maintenance which would be more of a "call us when you need us" plan instead of something so proactive and expensive.
We also have a plumber coming over to look at a few things. I suppose normal people call as issues come up one by one? We have a laundry list! Leaking spigot outside, shower leak, low pressure at kitchen sink with hidden leak somewhere, hot water heater may need replacement, and I need a sink hooked up in the studio. For today, we're hoping he can fix the kitchen sink pressure and that we can show him the rest and come up with a plan of action.
We also have a list for an electrician. Could be an expensive few months but it sure will be nice to get everything working properly and looking good.
Last night was a Fajita bowl again. I had cashew yogurt as sour cream and it was really good. Nice to get in more greens with dinner. I'm going to look for some of my old bowl recipes and get a few back in rotation.

Carla - it will be so nice when you get your yard how you want it. One less stress. Getting the leaks fixed will make a dent in your water bill. Sounds like spring cleaning.
Must be pasta night...I had the Banza spaghetti. I really wanted a big fattening pizza but having to be gluten free helps keep me from eating a lot of junk. I love bowl recipes too.
Mihani - that is a good pace on your walks! I am very excited about having the surgery for cataracts and new lenses. I quit wearing my contacts a couple of years ago because I still had to wear glasses to read and it was a pain. I am excited as my friend just had the surgery this week and has 20/20 vision and Brooks did great. I kept some nice sunglasses and looking forward to wearing them again.
I have a busy weekend planned with the 5 hour card making workshop. I finished my 10 cards for trading. We are suppose to bring a snack to share with 25 people. I bought those little plastic containers with lids and filled 25 with grapes and another 25 with nuts. I am sure there will be a ton of junk food. Going to take my sparkling water and a protein bar to get me through this and have a green smoothie in the morning.
Gave Cleo and CB aka Mister Grubby pants a bath this afternoon. It was high 80's. The dog park on base has an elevated dog bath...by the time we walked home the dogs were dry.

Mornin' all! Waiting for a load of laundry to get done and then two classes... strength and mobility. After classes will be work work work. And I'll get in a walk tonight. Perfect spring weather right now so I want to take advantage of some outside time. When it gets super hot and muggy I'll have to walk early or late or hit the treadmill.
Carla, can't wait! I laughed at "normal people call as issues come up" because that's definitely not me. When I finally got around to doing the repairs and remodeling on my house it was absolute shambles. Pretty much everything had to be repaired or replaced.
Donna, I had to quit wearing my contacts some years ago because they started to bother my eyes and even tried different brands. I don't mind wearing glasses though. They have certainly improved over my childhood when the lenses were so thick and heavy. Have fun at your card workshop!

GM, lovelies...busy board while I was away for a couple of days. Need to catch up.
The party was lovely...my stress was unfounded ... the waiter took my order like no big deal...vegan meal and that was it...I will post a picture when I am on my phone. It was beautiful...loads of veggies in a mold and topped with grilled tomato. The mushrooms in the mix were fabulous and my fav.
My back/hip/butt is finally better...took a week. Won't be doing the exercise that aggravated it so badly anytime soon.

juice of one lemon

herbs of your choice to flavor...or even roasted bell peppers...add in ideas are endless.
aquafaba add a little at a time to get the right consistency you like
KEY: ICE cubes... makes a really fluffy hummus
THIS is so easy. I used to make it in the food processor. NOT anymore. Throw everything in the VITAMIX and bam, hummus. So fluffy.

When is your eye surgery, Donna? I used to wear contacts but my eyes would get irritated and when I ran out (disposable) I didn't replace them. And now I haven't been to the eye doctor in maybe 3 years. I will need progressives next checkup for sure. I'm getting tired of wearing glasses to (almost) see the t.v. and then taking them off every time I want to see something up close.
Mihani, nice to know we are not alone in letting things go to shambles! The previous owners had 1 full time and 1 part time yard guy/handy man and the place was looking nice inside and out. Then we came along and everything has gone downhill.
The art studio in the shop is a project unto itself. The water has been run to the building but we need to either connect a drain in there to our septic field which is far away, or have a space dug and put in a small septic tank. When we to go to all of that trouble, we might get a bathroom put in there while we're at it. I also want a commercial vent hood for working with chemicals and a few other things that turn it into a project. I was really hoping to at least have a sink in there but hopefully now that we have momentum we can start making progress.
Today I have to get my blood work done and that sucks. I was so happy to go in the last time and now 6 months later I am not looking forward to the results. I guess that is just how things go sometimes.
oops, forgot to post my reply! Okay, got the labs done and picked up some more stackable storage bins for in my indoor hobby room. I am constantly shuffling around stacked bins! Radar had a vet appointment to get caught up on his vaccinations and he got a clean bill of health, pending a poop check for parasites. They need that before we can board them.
Rainy day here so I will do some organizing inside and work on the silk scarf I'm painting.
We ended up getting Thai food last night and there are leftovers for tonight.

Carla, you have a lot of projects to accomplish! Sometimes I really think I'd like to move to an apartment but rents are so high I would pay more for a two bedroom apartment than my mortgage and utilities put together! Crazy. So I'm staying put for now. When I retire I'll look for a nice little one-story condo. This is really too much house for me. I barely use half of it. Hope the lab results are good.
I decided against pasta. I ran to the grocery and making a baked potato and roasted broccoli. I'll have that and salad. I ended up eating oats with all the goodies for lunch because I was seriously hungry. I took my two classes then got out and walked a couple miles. I'm so much more consistent since I joined the walking group.

Going to get another walk in tonight after I go to the office. I realized yesterday carrying laundry up and down that my legs are getting stronger from all the walking. That's big motivation. I am really working to stay strong and mobile into old age.

Nanc, I missed your post because I took so long to post mine. I'm glad it turned out to be a nice party and that the food wasn't an issue. I use my vitamix to make hummus, too. Not that I make it very often lately. I will try to remember the ice cube trick! If I had to choose, I would keep the vitamix and give up the food processor.
Mihani, you are doing so good with your classes and walking! I love our place but there are times that I just want to move back into a condo too. I am quite sure we would pay more to rent a condo in town than we pay for our mortgage, which we re-financed at a good time.
Donna, how did your card making demo go yesterday? When I go through a paper phase, I have a few ideas waiting in the wings. I purchased silk pillowcases a while back and they came in these lovely folded envelopes. I saved them to reuse, but I'm also going to take them apart and create a template for cutting more out on the Cricut. I think they would be perfect for the silk scarves.
Did I mention that our ride-on mower is half broken? I am looking out the window and I see a crazy looking lawn. the blade on the mower is now on an angle so for every strip of lawn cut, one side is barely cut and the other is nearly bald (and therefore brown). Times that by 100s of strips of cut lawn with different directions and you get the idea.

I have been wearing glasses for 55 years. I have astigmatism. I tried contacts once...it took so long for me to get them in, and I ended up late for work ... too much stress. LOL And this was years ago...and back then, they were not that great for astigmatism. Now I use no-line progressives. LOVE THEM.

Oat waffles sound good Nanc. I would give that a try if I had a waffle maker. No more room to add gadgets here though.
The plumber is coming back tomorrow to install a new hot water tank. It is old, likely half full of silt, and has a burnt out element. It will be nice to have the option of having a hot bath or even just the luxury of enough hot water to both wash my hair AND shave my legs in the shower! (good timing with warm weather nearly here)
The kitchen faucet needed to be replaced so we bought one and Joe is going to install it today. If that doesn't fix the pressure, the plumber will be around to continue trouble shooting tomorrow. He didn't charge anything for the first visit.

Mornin' all. Busy day yesterday at the office then walking group. We did a mile then I came home and did another mile around the neighborhood. I'm going to try to hit 3 miles a couple days this week and I'm happy that I'm consistently going two miles now.
Nanc, I still haven't used the waffle maker that I got last year. Maybe I'll finally try that this weekend. I have another watermelon to try out this week. Hope it's a good one.
Carla, got my stuff. The swim shorts are very cool and fit great. The tankini is a little snug through the middle. I'm not going to order a larger size. Figure it gives me something to work for and hopefully it will fit better come June. Are you going to get one of the tankless hot water heaters? I've been considering it but there are cons.

The recipe I used for oat waffles was not that great. Need to find a better one. It was just bananas, oatmeal turned into flour using the Vitamix and plant milk. On the hunt...it does not have to be oats and bananas.
The power went out during the night. It was weird because what woke me was the complete silence. I have a ceiling fan going and the tv is on...(I cannot sleep with it perfectly quiet...white noise does not work...I think it was from growing up...my parents would be watching TV in bed and I was in my bedroom and could hear the TV and knew I was safe.)
Anyway, I called our electric company...soooooooooooo nice. I was the first one who called and he asked if I had tried the fuse box. I said ...heck no, I'm not going out there. He said he would be sending someone over right away.
Anyway, I called back in about an hour and four more people had called in so there was an outage in our area. All back to normal today. The first time it ever happened here. I had a lantern ready for just an occasion. Smarty Pants me.
Finally, I no longer sleep with the wedge thingy to elevate my leg ... and sleeping better on my side. FINALLY. Ten weeks post-op yesterday.
I am two for two. In the Facebook group I am in...many people are not so lucky...they have complications of varying situations. Now, my knee does not bend more than 115 degrees (some people are at 130-140...that's just crazy...but I had practically no bend before surgery)...but it is pain-free and I walk without a limp. So grateful.
Oh my gosh, I am so loving homemade hummus in the vitamix...so many recipes...and so easy and cheap. Using it on my Lavash wrap.
