Cookbooks
Many vegetarian (or even non-vegetarian) cookbooks contain vegan recipes, but I enjoy the following cookbooks. Hoping others will recommend cookbooks they use a lot and I will add them to the list! I have several more, but either haven't used them yet or don't use them a lot.

I just finished this delicious dish of Salt and Vinegar Kale Chips With Fried Chickpeas and Avocado from a recipe by Hetty Lui McKinnon. (I reduced the amount of chickpeas to stay low-carb.)
I made it as written with the egg included (i.e. vegetarian, not vegan) but the egg is listed as optional. This recipe is from the book Tenderheart: A Cookbook about Vegetables and Unbreakable Family Bonds which has received excellent reviews on GoodReads. I plan to check out the book from the library later, but this dish was sooo good that I had to share my find right away The book is organized by vegetable and apparently each recipe comes with suggestions for veganizing + other optional changes for food sensitivities etc.7 -

@takinitalloff this looks delicious! I saved it in my NYT recipe box and will have to try it sans the eggs I was just googling what I could use instead of fried egg and saw that people are actually making vegan sunny side-up eggs that even look the part (seems like a lot of work)...I'm not hugely into imitating non-vegan foods, so I think I will fry some tofu slabs instead2

@henridw2095 Please let me know how you like it! I'm not into imitation foods either -- back when I was fully plant-based I never got into the fake burgers and vegan cheese; and now that I'm eating low-carb I also don't make any keto breads or artificially sweetened desserts. Substituting an ingredient here or there is fine as far as I'm concerned... but when I have to replace everything to make a poor approximation of the dish, why not just make an actually yummy dish that's not trying to be something it's not?3

I just received a new cookbook Craving Vegan by Sam Turnbull (her blog is called It Doesn't Taste Like Chicken). I have had good results with her recipes before so have high hopes for these new ones. Simple and easy for weeknights.4

@Maya440 I love the Esselstyns! I'm going to watch that podcast tomorrow, thanks for the link. I have to say, every recipe I've tried from Minimalist Baker has been good to absolutely delicious. And she has a great filter on the site to narrow down the recipes (Veg, Vegan, GF, season, ingredients, and more).
@takinitalloff that dish looks delicious and the book sounds interesting. I'm going to see if my library carries it.
@jfp420 I've been to that blog but don't think I've tried any of her recipes yet. I'll have to give it another look.

I know they are old. I'm still a fan of Mollie Katzen's cookbooks. I use them for guidance; I typically don't follow recipes exactly as written.1

My library has several of Mollie's books. I only own the two "classics,"
If your library doesn't have Moosewood Cookbook, it's possibly worth getting a used copy. Classic yes, but it's very heavy on the butter. Feel free to modify the recipes with abandon. They'll still be good. A friend gave me his when he moved away, so now I have two copies. Just in case.
As long as you're ordering, you might as well pick up Enchanted Broccoli Forest.2 -
I love cookbooks, but then always end up tossing random foods onto a sheet pan for dinner…I will still check them out!2
