I will be home alone most of the month; hubby is in Wisconsin for 4 weeks, from Mon Nov 4, to Tues Dec 3. Hubby's Dad passed away on Oct 21; he's going to spend some time with his brother, sister-in-law, and Mom. He works from home, so he can do that anywhere π.
I'll be in WI for a celebration of life the weekend of Nov 16th, and in NY for US Thanksgiving Thu and Fri, but other than those days, I'm actually looking forward to solitude for a little bit. I have some things I want to get done, or at least started. And I can concentrate on my freggies without annoying hubby with meal experiments and the like ;-).

You lunch looks sooooooo good! I did see it earlier, in the soup thread, but wow it looks great. So, my 'little bit of a cold this week' is actually COVID . Just tested tonight, got a positive result, realized the kit was expired, so tested again with the kits that just came in the mail from the CDC free covid tests at home thru the USPS program. Positive again π€§π·
I've had no fever, only cold symptoms, since Tuesday. Sore throat on Monday, but it went away by afternoon. I've never had COVID before, so this is my first go around. At least it seems like just a cold ... that is making me really really tired π₯±

My lunch and dinner are a copy/paste of the last couple days. whole grain cream of wheat, with pitted dates and almonds for lunch; protein tea for breakfast; broccoli & cheese stuffed breaded chicken breast, with lemon juice, and roasted broccoli & carrots. I haven't eaten dinner yet, tho it is pretty late. This will be tonight's dinner, after I plate it and warm it, of course Leftovers from the last 2 nights:

Covid Day 5 here . We had to push hubby's flight a week, b/c he also has COVID. First time for me, second time for him. He'll be leaving for WI Mon Nov 11, instead of Mon Nov 4. I have been logging my food, but not updating here. For now, here's my whole grain cream of wheat lunch today, with almonds, and pitted dates, and a teaspoon of molasses:

Yesterday was actually my birthday. It was also the 2nd anniversary of the day our Mom died π.
Crazy/tough few weeks here in mkkland Quiet here in GREEN land! Hoping the GREEN crew is all well!

Snack - mixed berries - also used in green shake.

Happy Election Eve, to any in the US. Covid Day 7 here - still positive. Hubby (who got the updated COVID vax a month ago) is Covid negative today. Day 4 of Paxlovid, man I can't wait til THAT'S done, I have "Paxlovid mouth". A horrible, godawful, disgusting taste in my mouth, that 16% of people who take Paxlovid reported as a side effect π€§π·

Some morning greenie boosters.
Made a great batch of celery juice - just celery and lemon. Itβs usually too pulpy.. this was excellent. Itβs amazing how many vitamins and minerals are in celery.
Also - bought a few fresh heads of broccoli. π₯¦ I mixed with dried oregano I brought back from Ikaria, Greeceβ¦ so sweet!

Covid Day 14 (?), feel like I finally turned a corner yesterday. Still Dayquilling, but I'm not quite so stuffed, quite so tired, and I don't break out into a cold sweat with exertion. First go with COVID, it surprised me! Second week was worse than the first, I have to say (tho neither was dangerous, not trying to say I was super sick, just super cold symptoms).
I made sure to get my veggies on some of the days, but made sure they were green yesterday and the day before. I took photos, just didn't post them.
Same dinner both days yay leftovers), but add'l green serving last night. I had to use big bowl bc of the veggie servings I stuffed into my jambalaya lol.
Both nights: Jambalaya with rotisserie chicken, and full servings each of butter beans, , It's Delish soup vegetables, diced tomatoes, & frozen sweet peas. Last nights bowl had a full serving of frozen broccoli, too. Took me over 2 hrs to eat it, but I ate it. lol

I know it seems like I'm not trying, but I promise you guys, this challenge is changing my diet and my improving my health . I had a 6mo follow-up physical yesterday; my doc wanted to put me on statins at my annual physical, but I said, let me see what I can do with diet/exercise first. Well,- my A1C was down .1, from 5.8 H to 5.7 H (4.0-5.6);
- my cholesterol was down 12 pts, from 230 to 218 (<240),
- my LDL ('lousy chol') was down 28 pts, from 149 H, to 121 (<130)
- and my weight was down 17 lbs, from 212 (new 'high' score 'yay?'), to 195. It's actually 191 on my scale, but I guess I can't quibble lol).
So, even tho I'm arguably the least successful Greenie here, you guys are helping me immensely, and I plan to keep on slogging thru . I'm in WI for 4 days, from Saturday to Tuesday, so better from covid just in time to travel.
But I'm def keeping on keeping on, promise!
(I'll update my tick marks tomorrow, the 3-wk Hogwarts break ended Monday, I renewed my 'Unbreakable Vow' for the next four weeks (get 1 full serving of greens 4x/wk).
I read recently that substituting nuts, seeds, legumes and peas for processed and red meats can lower dementia risk by 20%.

Here's my Lentil soup today. I added the Swiss Chard this time for more greens.

A lot of my fruit was starting to go (I bought it before hubby left for WI, and before we both got COVID), so I cut the good parts off a bunch of pears, and had a pear and walnut dish for dinner, along with two avocado toasts. Three avocados were in the bowl, I salvaged enough to equal about 2 avocados - I mixed up avocado, lemon juice, olive oil, paprika mix with it all, ate half tonight, I'll have the other half tomorrow: I usually only eat 1 toast and 1/2 an avocado, but I'm leaving for WI 5a Sat, so I gots to eat it π€·ββοΈ. Hubby wasn't hear to share the avocado mixture, so I went a bit wild with the Smoked Paprika π€£.

I took another COVID test today, just to check. It's Covid Day 19 and my voice is still rough, I'm still sneezing/coughing (occasionally), and I'm still stuffed up (much less!). No more cold clammy sweats tho (yay!). I'm annoyed as all *kitten* that I'm still symptomatic on Day 19, but it is what it is π€·ββοΈ.
I kept getting mixed up which Covid Day I was, so I checked on my calendar last night. Def Day 19 - I shouldn't still have symptoms :-(. I leave on a 5a flight tomorrow, for WI. Celebration of Life for my FIL. I hope my cold symptoms don't stress anyone out. I'm def Covid neg tho, so it should be ok, I think. π€.
Finishing up the last of my fruit. Lunch was the second half of yesterday's avocado mixture. Dinner will be the last 2 kiwis, and bunch of purple grapes. Protein tea to go with, and some kind of nuts. Probably almonds or walnuts, we'll see. I didn't update my tick marks today, as I said I would, but I had a bunch to do today. It's all in my food log, so I can catch it up when I get back .
