Please share your thoughts and ideas about FRuits/vEGGIES as well as ways you get your freggies, since we have members who struggle with this. Along with recipes, you enjoy are welcome.

    A tray of roasted veggies ,,bake at 350 till browning yet still crisp. Turn often .. Any veggie you like cut in chunks, spread on a cooking sheet that has been coated with Olive or Avocado Oil. Mix them up to make a colorful display, carrots, green, red and orange bell peppers, red potatoes are best in this mix , brussels sprouts cut in half, cut half down. Then broccoli , mushrooms, onions. Lightly spray with Olive Oil and lightly season. Can add salt to taste at the table!! Good for a side dish or even a main dish with crispy celery, sliced tomatoes and a yummy avocado dip ..Yummmm Hint: Avocado Oil has a higher burn factor than Olive and does not really affect taste , so in baking or air frying Avocado Oil is often a better choice.

    @katiecondy1 I love roasted veggies! I use Avocado oil too!

    @katiecondy1 @Ceriusly1 If one prefers, one can also buy the veggies already sliced in the freezer section. It's cost-effective and time-effective. I agree with the avocado oil. I also use it.

    I like oven dinners where I bake squash or or bake potatoes or carrots or a combination of those with meat or fish at the same time. It works well to have everything in the oven. A fresh salad added to that is a good idea.

    There are so many good kinds of squash and potatoes could be baked whole or sliced into "potato fries" and baked with a little olive oil and maybe a sprinkle of parmesan cheese.

    Last year, I had a small head of cabbage leftover from making corned beef and cabbage. It had been in the refrigerator for over a week and had to be used. I chopped and boiled the cabbage. I had Ritz crackers, cream of asparagus soup, some wilted celery, onion, shredded cheese, canned chicken, and half and half. I crushed the crackers into a large bowl and added the chicken and soup. Chopped the celery and onion and added them to the mix. I added 2 cups of shredded cheddar and covered it all with half and half. I used a potato masher to mix it all up. I drained and added the cabbage. Dumped it all into a 9x13 pan, which I had generously greased with butter. Topped with more cheese and cracker crumbs and baked at 350 until the top was golden, about 40 minutes. The finished product was excellent!! We have it once a month now, and it is enough for three meals for us.

    I am a "dump" cook and rarely use recipes. I'm sure the calories in this dish are high. I'm sure it would be tasty, made with skim milk, and less cheese and crackers. I am curious now, so I will put the ingredients in Cronometer and see what the nutrition breakdown is.

    @luv2dns2 TY TY TY, that sounds yummy!! Your post reminded me of a dish I've not made in a while, but I WILL this week!! I throw veggies and pineapple into tin foil with meat and bake it at 350 until it's the texture I like. The time will vary based on how I cut the veggies. I love this feed!

    @Dianedoessmiles1 I like the sound of your oven meal, too.

    Tonight we had a Thai Shrimp soup that has peppers, butternut squash, coconut milk, chicken broth and shrimp. Lemon juice is added and cilantro or parsley after is cooked, as well as cooded rice.

    I have recently started using Palmini Angel Hair. It is the best pasta alternative that I have tried so far and 2oz* equals one vegetable. It can be eaten straight out of the package (after rinsing) or boiled for 5-10 minutes to soften. I prefer it boiled for 10 minutes.

    So far I've made "Spaghetti" and Meatballs with pasta sauce and turkey meatballs. I eat 1/2 the pkg per meal so with sauce it equals 5 freggie servings. I also made Chicken "Noodle" Soup with low sodium chicken broth, 3/4 cup mixed vegetables and diced chicken which equaled 3 vegetables.

    @Catwmncat I forgot have those "noodles" in the pantry! I do like it with chicken, broth, mixed veggies and I toss in some spinach and mushrooms and a sprinkle of nutritional yeast or mushroom powder. I sometimes add turmeric and a good dose of fresh ground pepper. I think I may know my lunch plan for next week! 😀

    @Dianedoessmiles1, @Ronnie_happy2ranch I have 11 pkgs coming tomorrow!!! I ordered a 6 pk of angel hair pasta (which I know I like) and a variety pack which contains Linguine, Angel Hair, Lasagna, Rice and Mashed to get a feel for the other varieties.
