I thought we could share our recipes here. This way as you are being motivated and logging in with the group, you have the ability to plan a quick snack or meal without browsing around :)

  • Kale Chips (even my kids love it!):

    Kale ( I usually make 1/2 of a big bunch)
    Olive oil (I use it in the spray)
    Salt
    Pepper
    Minced onion (optional)
    Garlic powder (optional)

    I line my cookie sheet with foil and spray with my olive oil. you can also just use reg olive oil about 2 tsp and rub it with a paper towel over the foil to coat it. Next after I wash the kale I cut out the big stem area and make make about 4" pieces. Place kale on cookie sheet, sprinkle with salt and pepper. Most times I do the dried minced onion and garlic powder for that crunchy salty flavor. Bake in pre-heated oven (350F or 175C). I bake till edges are brown about 12-15 minutes.

    One of my favorite things to eat is individual pizzas, but after my husband and I decided to give up gluten, it wasn't really and option. So I found another way to have my pizza.

    1 Eggplant in 1/2 inch round slices (you can also do this with zucchini for extra mini pizzas)
    Marinara Sauce
    Mozzarella Cheese (I like smoked)
    Parmesan Cheese
    Toppings (I like mushrooms, bacon, and spinach)
    Olive Oil
    Salt and Pepper

    Preheat the oven to 375 degrees F. Lay the eggplant on a sheet and drizzle with olive oil and season with salt and pepper. Bake for 15 minutes. Add a spoonful of marinara to each round and top with mozz cheese, toppings, and parmesan. Bake in the oven for another 5 minutes. Let cool and enjoy. This is also really great for a party as a vegetarian dish.

    I stay pretty busy between work school and the gym so I found this last night.. pretty excited about it since I LOVEEE AVOCADOS!

    But its great bc my weakness is when I'm short on time, I use it as an excuse to go to a drive thru.. I say I'll get a salad, but by the time I smell that relish fried food.. I'm a goner! Lol

  • Had a really good meal last night! I wanted to share.

    Eat Smart - Vegetable Stir Fry (12 oz Bag Broccoli, Broccoli Slaw, Carrots, and Snow Peas) (double portion)
    Kirkwood Farms - Frozen Boneless Skinless Chicken Breast
    Treasure Cave - Blue Cheese - Crumbled, 1/4 Cup
    Potato - Red/gold Potato (Boiled, With Skin), 3 oz

    So I made the vegs in the bag as directed, cubed my chix and added it on top, 1/4 of blues cheese and diced up the small potato. It was so yummy! Also low carb (under 100g), which is what my Dr. has suggested since I am type 2. Seems to be working well, my sugars are awesome.
  • Faux Pumpkin Pie

    1/2 ricotta cheese (part skim or whole milk, which ever you prefer)
    1.5 tsp pumpkin spice
    1tsp vanilla extract
    splenda

    Mix well and YUM! This can be 2 servings, taste great with sliced apple.
