Delicious pumpkin ice cream

1 cup non-dairy milk (I used So delicious no-sugar vanilla)
1/2 c coconut milk (I used congealed coconut fat from can unsweetened coconut)
1 c pumpkin purée
1/2 c - 3/4 c sweetener to taste (3/4 c Florida crystals)
1.5 tsp vanilla extract
2 tsp cinnamon or pumpkin pie spice
6 oz silken tofu


Purée ingredients in blender, process in ice cream maker. Freeze, enjoy! A delicious treat for vegans or others looking for "healthy" ice cream alternative. Yum!

    Maybe less cinnamon...to taste.
