Homemade cereal!

When I went gluten free, I decided to start making my own cereal since I loved having a quick breakfast in the mornings. I tried some of the gluten free options and while they were ok, it just wasn't as good as when I made it myself. So I thought I'd share the recipe with you guys in case you wanted to try it. I also know that this is sweet enough for kids to like it too! So this might be something for the moms to try. It's basically granola cut with plain cereal. I like to get the ingredients on sale or in bulk online so that it stays cheap!

1/4 cup White Sugar, Brown Sugar, or Applesauce
1/4 cup Honey, Maple Syrup, or Agave
2 tbsp Coconut Oil
2 tsp Spices of choice (Cinnamon, Ginger, Nutmeg, and Cardamom are good options. I like Ginger with Nutmeg and Cinnamon with Cardamom)
Pinch of Salt
4 cups Rolled Oats
1 cup Whole Flax Seeds
4 cups Mesa Sunrise Cereal (or any gluten free cereal)*
2 cups Dried Fruit or Nuts*

Mix the first 3 ingredients together very well, then add the salt and spices. Mix the oats and flax seeds in and stir until completely coated. Place in the middle of a 250 degrees F (120 degrees C) on a parchment lined baking sheet for 1 hour, stirring with the tip of a fork every 15 minutes. Mix with the other ingredients in a bowl or pour into the storage container you're using (I use a big plastic storage pitcher I found on sale) and shake until mixed. Eat and enjoy! I'll sometimes make 2 batches of this since my husband enjoys it too. It gives you about 5 grams of fiber and 5 grams of protein at 240 calories per cup. It changes depending on what you add to it of course, but that's the general amount. It keeps you full for a long time too. I love having this on hand in the mornings since I like quick and easy. This with some vanilla soymilk and a hard boiled egg and I'm good to go!
