Butternut Squash Soup

Ingredients
Butternut squash Celery
Carrots
Onions
Garlic
Olive oil
48 ounces low fat chicken broth
1/2 cup plain Greek yogurt
Canned chipotle, one small, very finely chopped Black pepper
Directions
‣ Bake halved butternut squash in oven at 400 degrees until tender. Generously coat with olive oil and black pepper to taste.
‣ Scoop the squash out of the skin and save.
‣ Cook onions, carrots, celery and garlic in large pot with olive oil until
tender.
‣ Add chicken broth to pot, place cooked butternut squash into pot and
simmer for 30 minutes.
‣ Once cooking is completed blend into a super smooth soup.
‣ For flavor accent: combine plain Greek yogurt with chopped chipotle, add
black pepper to taste. Add about 1 tablespoon artfully into soup for visual and taste enhancement.
