Here are two of my favorite recipes!

Grilled Portobello and Canadian Bacon Omelette
Preheat the broiler.
8 eggs
1 tbsp. milk
1 cup sliced scallions
2 tbsp. olive oil
4 cups sliced portobello mushrooms
1/2 lb. diced Canadian bacon
Heat the oil in medium size non stick skillet on med high. In small bowl whisk the eggs, milk and scallions. Add the mushrooms and bacon to the oil and sauté for 2 minutes. In small bowl whisk the eggs, milk and scallions. Pour egg mixture over the top of the mushrooms and let set for 2 minutes. Place under the broiler for 3 minutes, or until just cooked. Cut the omelette in half, slide out of the skillet and serve. Makes 2-2 servings.

Pan Glazed Balsamic Chicken

Olive Oil Spray
3/4 lb boneless, skinless chicken breast
salt and pepper to taste
1/2 cup good quality balsamic vinegar
1/4 cup pine nuts
1 tbsp dijon mustard

Heat a med. size non stick skillet on med high and spray with olive oil spray. Brown the chicken for 3 minutes, turn and brown on the other side for 3 minutes. Remove from the heat and cover with the lid. Let it sit for 3 minutes.Remove the chicken to a plate and sprinkle with salt and pepper. Cover the plate with foil. In the same skillet add vinegar and pine nuts. let cook on med high to reduce or until appx. half the liquid remains (appx. 30 seconds). Add the mustard and mix well to make a smooth glaze. Return the chicken to the skillet and turn to coat in the glaze. Cook another minute then divide between two plates. Top with any variety of vegetables.
