Asian Pork Schnitzel
Ingredients:
1 pork loin chop
1 egg
1/4 cup coconut flour
1./2 teaspoon curry
1/2 teaspoon coriander
1/4 teaspoon garlic powder
2 T ghee or butter
Take pork and pound to 1/4 inch thickness
Mix coconut flour with curry, coriander and garlic powder
Beat egg
Dip pork in egg then dip in coconut flour mixture till coated on both sides
Heat butter on medium high
Pan fry pork 2-3 minutes on each side till cooked through
**Pork doesn't get crispy but if you wanted it crispy I think you could use more butter/oil0 -

Pork Loin with Bacon and Apples
For the pork loin:
1.5 to 2 lb. pork loin
2 Tablespoons lard
salt & pepper to taste
ground rosemary
ground sage
For the Bacon and Apples
4 strips nitrate free bacon
2 apples
1 tsp. cinnamon
Preheat the oven to 350 degrees. Pat the pork loin dry with a paper towel. Melt the lard in the bottom of a baking dish with. Lay the pork loin in the pan, turning it once to coat all sides with the lard. Sprinkle with the herbs and salt and pepper. Roast in the hot oven until done, no pink remains when it's cut crosswise.
Meanwhile, snip the bacon into 1-inch pieces and place in a skillet. Core and slice apples into 1/2 inch wedges; add to the skillet. Sprinkle with cinnamon. Cook over medium heat until the bacon begins to crisp and the apples become soft. You can sweeten a bit with raw honey or maple syrup or coconut sugar if necessary.
To serve, slice the loin into 1/2 inch slices and top with apple mixture. Good sides are baked sweet potato, broccoli, or roasted Brussels sprouts.1
