This is a very elegant way to fancy up smoked salmon. You can serve on a bed of lettuce, or on Belgium endive leaves and sour cream as an appetizer, or with eggs for a sophisticated brunch or breakfast.
Smoked Salmon Salad
150 grams (approximate 15 slices) of smoked salmon
2 tablespoons capers in vinegar, drained
1 tablespoon vinegar from jar of capers
2 tablespoons finely diced shallot
1 tablespoon extra virgin olive oil
1 tablespoon apple cider vinegar, or freshly squeezed lemon juice
Mix all contents in a bowl. Serve cold. Can store in refrigerator for a few days.0
