    Faux mashed potatoes (cauliflower instead of potatoes)

    1 head cauliflower, chopped into a few pieces
    1/4 brick Philadelphia cream cheese
    Few tablespoons butter
    Few tablespoons heavy cream
    Salt and pepper to taste
    Garlic powder (optional)

    Steam or boil cauliflower until tender when you poke a fork in it. Transfer cooked cauliflower to food processor. Add cream cheese and butter. Grind to a mash. While grinding, add enough cream until desired consistency of mash. Add salt and pepper. Add a smidgen of garlic power (be careful not too much) this step is optional. Serve hot. You can even put in refrigerator and reheat to eat as leftovers next few days. For those wanting to avoid dairy, replace cream cheese, butter and cream with extra virgin olive oil (add enough oil until you get desired consistency of mash). Enjoy!

    Buttery Bacony Brussel Sprouts

    4 slices bacon
    3/4 stick butter, or equivalent measure of olive oil
    1 lbs or 0.5 kg brussel sprouts, frozen
    Nutmeg (optional)
    Salt and pepper

    Chop bacon into 1 inch squares. Place in a sauce pan, and on medium heat fry until cooked to your desired level (very crispy or soft). Add butter (or oil). Wait until melted. Add frozen brussel sprouts. Add salt and pepper to taste. Grate in some nutmeg to taste (optional). Place lid on sauce pan, turn heat down to medium low. Cook until sprouts are very tender when poked with a fork - stir the mixture occasionally to check for sticking or burning on bottom of the pan, you may need to reduce heat accordingly. Serve warm.

    String bean almondine

    Frozen string beans, one pound
    Four strips of bacon
    Half stick butter (or equivalent amount in extra virgin olive oil)
    3/4 cup blanched and slivered almonds
    Pinch of garlic powder
    Salt and pepper to taste

    Cut bacon into one inch pieces. Fry in saucepan on medium low heat until cooked but still tender. Add butter and wait until melted. Add string beans (no need to defrost) and slivered almonds, and continue to cook until beans are as tender as you like. Add garlic powder, salt and pepper to taste.
