Here's a great recipe for homemade waffles. These waffles are high in fiber, very filling, and taste wonderful. Don't be intimidated by the list of ingredients. It's a very easy recipe and once you've made the entire batch you can freeze them for a fast and easy breakfast.

    Ingrediants
    -2 eggs, beaten
-1 3/4 cups 1% milk (or you can use skim milk for even less calories)
-1/4 cup canola or vegetable oil
    -1/4 cup unsweetened applesauce
    -1 tsp vanilla
    -1 cup whole wheat flour
    -1/2 cup flax meal
    -1/4 cup bran
    -1/4 cup all purpose flour
    -4 tsp baking powder
    -1 tbsp sugar
    -1/4 tsp salt

    Directions
    1. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat flour, flax meal, wheat germ, all purpose flour, baking powder, sugar and salt until batter is smooth.
    2. Preheat a waffle iron. If it is a non-stick you don't need to use cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.
    3. Once waffles are done you can divide them in half to freeze. Put parchment paper between layers and put in freezer
    bag.
    Makes 6 large waffles
