Used it today to top my salad…yummy! Should have skipped the dressing, it adds so much flavor! I used it to get some protein in my salad, since my chicken piece was so scrawny! Plus the beans are great fiber! Tonight I topped my turkey burger with it and didn't even miss not having a bun.
My recipe makes a ton..here it is:
2 Rotel cilantro and lime tomatoes
1 can petite diced tomatoes ( i like the tomatoes, can you tell?)
1 can black beans
1 can black eyed peas
1 onion diced
2 green peppers diced
diced jalepenos to taste
1/4 bottle of fat free zesty italian dressing
Mix. Can top salads, chicken, turkey burgers, etc. I also have crumbled up 10 or so tortilla chips in a bowl and topped with the caviar. Portion control at its finest.
