weight and fat distribution after weight restoration

hi guys--
I am newly weight restored to the target I've always been told to get to. I was pretty severely malnourished and very underweight and I've gained all the weight between May and the end of November of 2013. My weight has managed to be pretty evenly distributed and I don't have the typical refeeding belly with skinny everywhere else.
I've read a lot of research articles about body fat percent and stuff of people who have gained weight in refeeding from anorexia and found that it is typical for anorexics to gain a lot of actual body fat and sometimes go over where their genetic body fat set point would be had they never had an ed. I'm really frustrated with this in my own body and I know that I could exercise and get it down through weight training and cardio but I have a very extensive history of extreme over exercise and I DO NOT want to get caught up in it again.
Instead I just want to lose a little weight in a healthy and non-super restrictive anorexic manner. I have read so much on the regular MFP forums about going into 'starvation mode' and not being able to lose weight at all if you go below 1000-1200 calories. Believe me I am not interested in doing that anyway. I guess my concerns are given that I have recently weight restored and my needs to maintain my restored weight, without exercise, were around 2000-3500 per day. I would like to know what calorie levels would be too low, or basically trigger starvation mode, for someone with calorie needs like mine to maintain weight, who has obviously recently gone through refeeding.
I just don't have any answers and regular MFP users really don't know squat. No offense. I apologize if this post is inappropriate or triggering. I am not trying to go back to my eating disorder or even get to a sickly weight. I just want to feel and be a little more comfortable.
