What is your best, healthy, kid friendly dinner? I can’t wait to see them. Oh and please post the whole recipe if you can, especially if it’s made in the slow cooker.

    It's only as healthy as what you dress it with, but I made a fave of ours yesterday...

    Crock Pot Mexican Shredded Chicken

    2 lbs boneless skinless chicken breast
    1/2 teaspoon salt
    1 Tbs homemade taco seasoning (or your choice of spices)
    1 cup picante sauce (or your choice of salsa)

    10 servings
    140 calories, 3g fat, 4g carbs, 23g protein, 2g sugar, 697g sodium (this can be lowered of course)

    I rub a little canola oil in the crock (I don't use spray), place the chicken in and sprinkle with the salt and seasoning and cover with the salsa. Cook 4 hours on high or 8 hours on low. I used 4 frozen breasts (36oz.) yesterday and cooked on low for 10 hours. Once it's done, use 2 forks to shred. I served with taco shells, tortillas, cheese, salsa, low fat sour cream, mashed avocado, and everyone made their own. Can be used for nachos, quesadillas, salad or anywhere you'd want to use cooked chicken.

    I really try to only make one meal for the family - I don't like to make 3 dinners a night! We do sit down to eat together every night as it's really important to both of us to have that family time. We put the babes in their highchairs & pull them right up to the table with us. Our daughter generally gets the same meal as us, just maybe a bit more bland than what we have prepared.

    Steamed fish & veggies have been popular in this 'get slim' plan of ours. Fish (halibut, mahi-mahi, talipia, salmon, cod - all the frozen bags from Costco) are house-hold favorites. We have a kick-*kitten* steamer that we use for most of them but do toss them on a baking sheet on occasion as well. Our daughter will eat pork chops or tenderloins, steak and chicken as well so that helps a ton!

    Steak salads have been popular in our house lately; I think I just miss eating summery foods! We do a lot of Mexican themed meals - quesadillas (sp?) for our daughter, lettuce wraps instead of shells for us.

    With our babies just getting into food, I try to incorporate a little of our dinner into their meals. That can be pureeing some of our cooked veggies in the Magic Bullet with some rice cereal for them to eat to sharing the avocado that I'm using in our salad with them.

    I typically don't follow too many recipes but would love to see what options you mommies have for family dinners as well!

    I agree. I only cook one meal. I give the baby the parts of that meal he can eat, and maybe some jar food if it's a meal that is not baby friendly. I do have a steamer/deep fryer that I never use. I'll have to try it out this weekend. How long do you steam your fish?

    I need to get more fish in both mine adn my husband's diet, I saw you had several listed on yours, any place in particualr that has great recipes that are quick?
