Really easy homemade gluten free chicken goujons

I have been playing around with various methods of creating chicken goujons or nuggets so that my kids don't miss out due to my digestive inabilities!!!! Todays were by far the easiest and they have been gobbled up very quickly.

2 x 375g packs of mini chicken fillets (mine were from Aldi)
1/3 cup course raw polenta
1 tsp salt
1 tsp smoked paprika
1 tsp mixed dried herbs
1 tsp olive oil

We got 5 servings out of this ( 2 mini fillets each) although my youngest couldn't manage all of hers.

Either leave the fillets whole or chop into bite size chunks - all down to your preference. Put the polenta, seasoning and oil in a large bowl and mix, add the chicken and toss to coat evenly. Spread over a non stick oven tray and bake at 180 C for about 12 minutes.

No egg coatings required so also dairy free :)

My daughter wanted to add garlic salt too but we had run out, bet that would taste fab too though.

Loads less calories than frozen gf chicken nuggets.
