I had a real success today with a conversion of an old Kryptonite food recipe into a new low carb high protein recipe. I enjoy chickpeas but I have never cooked with chickpea flour. I shy away from wheat wraps these days for obvious reasons-too high in carb and wasted calories. I took my old Alton Brown crepe recipe and substituted chickpea flour and carbmaster 11g protein skim milk for the wheat flour and whole milk. The result is perfectly wonderful crepes that are sturdy enough to make into a wrap.

Whisk together
2 large eggs
1.25 c carbmaster skim milk
3 tbs melted salted butter
1c chickpea flour
Pinch of salt
Crepe batter is very thin, if you have never made crepes, watch some you tube videos, it would take too long to explain.

Cook in small nonstick pan over medium heat. Take pan off heat between crepes and wipe on a dab of coconut oil with a paper towel.
The recipe makes 20 crepes. 65 calories a crepe(this includes the coconut oil to grease the pan). Serving of 5 crepes is only 13 carbs and 11.5 g of protein.
I spread mine with mayo and stuffed them with avocado and tomatoes.
