The Veggie Issue

Is anyone else having an issue with 2 cups of veggies at each meal? Don't get me wrong I love all kind of veggies I'm just finding it hard to get them all down. Also has anyone tried juicing any veggies? I'm familiar with juicing but you would normally include a fruit. Now I know on High Carb days this is not a problem but on Low Carb days other than breakfast the fruit is considered a carb and not allowed. Also I saw someone post about Carrots. According to the Food List breakdown of the book Carrots are considered a Carb. I know that on another section of the book he says eating veggies is unlimited and it list Carrots but one of these has to be a typo. I've been considering them a Carb like the Food List says which isn't to bad but I'm wanting to get this cleared up. I tried to reach out to Chris and his wife Heidi on FB and Twitter but I know at this moment they are busy doing extreme makeover auditions.

Any advice and success stories are welcomed!!

    I know this has been inactive for awhile, but I'm going to answer. I don't do 2 cups at each meal. I take in as much as I can. I also blend/dice/mince in as much as I can to my recipes. I do a lot of stir frying now.
