salad/veggie options

Hello all. I have seriously fallen off the wagon and am hopping back on. Part of my down fall is I get tired of eating the same salads/veggies. I also have 5 kiddos who love pastas and rice. Trying to find a balance of things the hubby and I can eat with the kiddos. They eat veggies pretty well. I am not fond of the idea of fixing separate meals for us all.

    I have even done zuccini this way. The kids dip them in ranch of course. lol We also make Kale chips.

    Good alternative to the normal dinner side, why not chips. ;) Good luck.

    I have two 5-year-olds who can be picky, but all of us love roasted veggies (esp broccoli and cauliflower); with some olive oil and a little salt and pepper, they're really good!

    I'm trying to get back on track myself... I lost 8 pounds between Nov and Feb, but then just plateaued. I've lost another 2 lbs, but it's been super slow going. I get tired of quinoa, veggies, and salads pretty quickly also. I am usually very anti fruit in salad, but I had one with strawberries one day and it was really good! Helps break up the monotony... I also try to make my salads really colorful so that it looks less boring.

    I really like quinoa pasta! It's a healthier option and tastes a lot like regular white flour pasta. I use Ancient Harvest - although it's a little pricey, especially if you eat it more than once a week. Orgran also makes great pastas. Both brands only use a few ingredients so that's always a plus if you are trying to stick to a clean eating diet.

    I've been eating a lot of rice lately too - it's so easy and delicious. I just try to add a ton of veggies and beans to it. Texamati makes a brown rice and red lentil mix that's pretty good. My husband and I both both some vegan and vegetarian cookbooks for more vegetable ideas... we both still eat some meat, but we just needed more options! The Oh She Glows cookbook (vegan) has some great ideas that I've started trying...

    I like a lot of recipes from thegraciouspantry.com - all delicious clean eating recipes!

    I think we all get to that point sometimes where we get bored with what we're eating so I hope some of this is helpful!

    So...be the parents. What you fix is what they have to choose from. If they want something else, then they're out of luck. Quit having something you don't want them to have, and they'll eventually stop asking for it. There's no reason to cook separate meals.

    And don't eat the same salads/veggies all the time. Start branching out. Add something new or something cooked a new way to one or two meals a week that everyone has to try. I highly recommend checking out Paleo and Veg*n cookbooks and recipe sites for things to do with different veggies. They'll be the most likely places to find new vegetables and new ways to prepare the old standbys.

    I switch my lettuce up. Sometimes I get iceberg sometimes I get spring mix(one of my favs) or even just plain raw spinach salads(my almost 11 year old daughter's fav). You can really mix up the lettuce if you try out the varieties out there. And I also swap around the "goodies" as my family calls them(radishes, bell peppers, cucumbers, tomatoes, etc).

    Oh and I also second the quinoa pasta. More protein and fiber and lower on the glycemic index. It tastes a lot the same but sticks more so its tough to get the cooking right. I also favorite the Ancient Harvest brand. ;)
