A new way to think about desserts

I have tried just about everything I heard of through the diet world. I've been on Atkins, Soutbeach, HCG, and so many more. About the only thing I really haven't tried is the processed food diets because I don't think of that as "real" food. However, a recent illness has forced me to re-evaluate my diet, yet again. Thankfully, I do practice Kosher habits now because I have eliminated the garbage eaters of the world, namely, pork, shellfish etc. But Kosher, doesn't cover desserts :-) My plan now is to eliminate most desserts and re-train my modernized brain into believing fruits are full fledged desserts. Anyone have any dessert recipes that have really low carbs and are most non-refined, non processed?
