Healthy recipe swap

Good afternoon everyone! I am in a rut lately trying to think of healthy eating recipes. So I thought, what are some of your favorite recipes or a go-to meal.

We are currently in a ground turkey taco/nacho (high fiber tortillas), tuna patties/tuna salad rotation. Getting old, quickly.

    My current favorite is The Food Network's Chicken Tortilla Soup. It smells not as awesome as the finished product while cooking, but OMG, a huge recipe doesn't last long in my house... In less than a week we made two huge batches.

    I also like www.skinnytaste.com for recipe inspiration. She has a lot of stir fry recipes, but they do require some prep time. Somewhere I have a recipe for pretzel honey mustard chicken tenders. They are pretty awesome, low fat, and can even be made gluten free (use gluten free pretzels).

    I have a recipe for Pork with Peanut Noodles that was an unexpected pleasant surprise. It combines a number of foods I don't like on their own to a yummy orchestrated masterpiece.

    I also have a low fat pork shoulder roast that makes a huge pot, with veggies. You can also use the leftovers for pork tacos. Mmmm....I need to make this one. Haven't in a while... LOL Takes roughly 3-4 hours depending on the size of the roast...

    My friend has a great recipe for spicy turkey chili she loves. I haven't gotten to try it or her parmesan chicken with orzo yet... Let me know if any of these sound good and I'll look up details.

    I use skinny taste too when I want something different. Have not had something I did not like yet.

    What kind of recipes are you looking for? Do you want something different for the ground turkey?

    I think I just needed reminders of all the healthy things other people like or what I would like to try. I will look up skinnytaste and see what is on there.

    Time to cook at home has gotten away from me and we are in sleep deprived mode with the kids. Work, eat, play, sleep.

    I have made several cauliflower things over the last month. Faux mashed potato (half cauliflower puree/half potato), cauliflower fried "rice". Usually do pork roast a lot too, just keep forgetting about it. :)

    Hmm well not everything I cook would be called 'skinny', I still cook regular meals, but some have had a few adjustments made to lower the cals an up the veg. All my ground beef is lean or extra lean and I always trim fat off other meats and use skinless chicken breasts. Some of the regulars I make include:
    Pork or beef stew, I use less meat and more veg now in the slow cooker.
    Homemade pancakes rather than boxed to try and lower the sodium, personally I prefer uk pancakes (crepes) still and they are less cals and salt.
    Shepherd's pie half potatoes half rutabagas mashed together for topping rather than all potato.
    Baked pasta with spinach and sausage (skinnytaste)
    Spinach and feta stuffed chicken breasts (skinnytaste)
    Kielbasa fried rice lightened up
    Spaghetti sauce lots of veges in this, mushrooms, onions, peppers, tomatoes, carrots, celery, whatever you want. The pasta I use Smart kind as I do not like whole wheat, and sometimes I do a spaghetti squash in the oven and then have half squash half pasta.
    Paprika chicken and rice
    Pasta and bean soup (skinnytaste)
    Crock pot salsa chicken
    Pork in mushroom sauce with egg noddles or roast veg
    Lightened swedish meatballs
    scones based pizza
    Pulled pork
    Feta and Leek Quiche
    Crustless pies with variations of courgette, broccoli, mushrooms
    Stir fry
    Chicken tortillas
    Italian spinach meatballs
    Chilli
    stuffed cabbage casserole
    stuffed spaghetti squash
    cauliflower tots
    spinach, feta and potato gratin
    Mexican chicken and rice bake
    Homemade chicken soup
    Pasta feta salad
    Broccoli cheese fritters
    falafels
    Garlic chicken and broccoli with rice
    There is a few more lol and a fair few sweets/baked goods/muffins.

    I have recently discovered how much I love Savoy Cabbage in place of bread or tortillas, so we've been eating all sorts of things where I can use that.

    Hamburgers on Savoy Cabbage (as the roll)
    Ground Turkey with buffalo wing sauce, shredded carrots and celery topped with some blue cheese on a cabbage leave (like a taco)
    Fish Tacos - cajun spiced tilapia pan sauteed, with broccoli slaw, cilantro and some chipotle sauce on a cabbage shell
    Philly Cheese Steak styled sloppy joes (ground beef, with some beef stock, sauteed onions, garlic, seasoning salt) on cabbage with some melted provolone on top.
    Fajitas - grill a flank steak, sliced up and top with the usual toppings

    I found that if I sub cabbage, I save about 200 calories a meal. My kids and husband can eat the same foods, just on their rolls or tortillas, and I really enjoy the cabbage more. It doesn't taste very cabbage-y, and it's sturdy enough to hold up to most uses, better than ice berg lettuce which I've had in restaurants. My daughter usually joins me with the cabbage, cause honestly, it's really good!

    Thanks guys!! All of that sounds so yummy.

    Do you cook the cabbage leaves for a bit before if using the a wrap?
