I've been writing recipes for my cooking blog for nearly 3 years now, and I wanted to share some of my favourite low-calorie recipes. You can find my blog here: martinesrecipes.blogspot.co.uk.

This first one I actually just made yesterday and I am SO HAPPY with it! Delicious, crunchy potatoes at only 167 calories per portion!

Oven-baked grated potato balls

Ingredients

- 400g potatoes, peeled and halved (quartered if very large)
- 1/2 tspn ground paprika
- sea salt and freshly ground black pepper
- olive oil

Nutritional information

Serves 2
167 calories per serving (carbs: 35g, fat: 1g, protein: 4g, sugar: 1g, sodium: 1288mg)

Instructions

1) Parboil the potatoes in salted water for about 10 to 12 minutes, depending on their size. They should still be quite firm.
2) Drain the potatoes and leave them to cool down for 5 minutes.
3) Meanwhile, preheat oven to 175c (fan) and line an oven tray with baking parchment.
4) Grate the potatoes using a coarse grater or food processor with a grater attachment.
5) Season the grated potatoes with paprika powder, salt and pepper.
6) Using your hands, form the mixture into 20 small heaps. Try to leave them slightly imperfect, as they roast better when not completely smooth.
7) Brush each potato ball with a minuscule amount of olive oil, then bake in the oven for 40 to 45 minutes, until golden brown.


Skinny chocolate and banana cupcakes

Ingredients

- 100g self-raising flour
- 70g caster sugar
- 100g very ripe banana
- 50g unsalted butter (at room temperature)
- 2 large eggs
- 2 tblspn sour cream
- 10g cocoa powder
- 1/2 tspn vanilla extract

Nutritional information

Makes 9 (without topping)
146 calories per serving (carbs: 18g, fat: 7g, protein: 3g, sugar: 9g, sodium: 41mg)

Instructions

1) Preheat oven to 165c (fan).
2) In a large bowl, mix the butter, banana and sugar together until smooth.
3) Add the remaining ingredients and mix together on the highest speed.
4) Fill a muffin tray with paper liners and pour in the mixture.
5) Bake in the oven for 15 to 18 minutes until risen and cooked through.
