Cheesy protein boost

We are always looking for ways to boost our protein and I have taken a page from the wt lifters and added part skim ricotta to my grocery list. Many things I eat can have a 1/4 cup of this added. I have put this in tuna/chicken salad, stirred it in to scrambled eggs with cheddar and have dumped it on beef stew. If you put it in soup or stew and melt a slice of Swiss over it it is really good-kinda fondue flavored. The cheese itself is creamy but bland- which is good because cottage cheese has too much salt which is why I don't use it that often. anyone else have some favorite ricotta uses?

    Ricotta pancakes. YUM YUM YUM. LOVE them. I get the recipe from theworldaccordingtoeggface-- her website is wonderful-- lots of tips and recipes. I make a double batch and put extras in the fridge for snacking or to grab when I do not have time to cook something. :bigsmile:

    I use ricotta a lot ..... Add it to eggs, make eggplant lasagne, put it on different sauteed veggies. It's a great source of protein.????

    It's a basic in Italian cooking. Make sure it's really fresh. It goes off pretty quickly. Layer with tomato slices and cheese and bake at 350 for about 15 minutes for a mock lasagna. It's also really good mixed well with your choice of artificial sweetener and cinnamon. Ricotta is the base for cannoli filling and lends itself well to both sweet and savory applications.
