White Bean Turkey Chili
Servings: 14 • Serving Size: 1 cup • Old Points: 4 pts • Points+: 5 pts
Calories: 211.5 • Fat: 5.4 g • Protein: 22.5 g • Carb: 23.7 g • Fiber: 8.4 g
• cooking spray
• 2 small onions, chopped
• 5 garlic cloves
• 2 tsp chili powder, to your taste
• 1 bay leaf
• 1/2 tbsp cumin
• 1/2 tbsp oregano
• 2 tsp red pepper flakes (to taste)
• 3 lbs 99% lean ground turkey
• 4 16 oz cans of cannellini beans, rinsed and drained
• 2 cups of fat free chicken broth
• 1/2 cup of fat free sour cream
• salt and pepper to taste
Heat a large heavy bottomed pot over medium flame. When hot, spray oil. Add onions, garlic, saute about 5 min. Add meat and cook, breaking it up until white, about 5 minutes. Add salt, chili powder, cumin, oregano, red pepper flakes and cook for 2 minutes. Add beans, broth, cook uncovered about 10 minutes.
Lower heat and cover, simmer about 45 minutes mixing occasionally. Add sour cream and cook 5 more minutes. Adjust seasoning and salt to taste.
Top with chopped red onion, chopped fresh cilantro, light sour cream, jalapeños and reduced fat cheddar if desired.0 -

Hrrrmmp. Seems mfp has taken away the picture-posting ability. I wanted to link to the beautiful picture of acorn squash with chili-lime dressing. Doesn't work anymore.
Anyway, I add a lot more lime flavour to this one by grating the lime skin into the dressing.0 -

Here's a hearty recipe from Woman's Day Magazine Sept 2011 Issue. So far everyone that has made it, love it. Hope you feel the same.
QUICK SAUSAGE, WHITE BEAN AND SPINACH STEW
Active: 15 min/Total: 30 min/Serves 4
1 Tbsp olive oil
12 oz fully cooked Italian chicken sausage, sliced 1/4 inch thick (can use turkey or regular Italian sausage but will need to adjust calories
4 cloves of garlic
1/2 cup dry white wine
1 32-oz container low-sodium chicken broth
4 oz ditalini pasta or other soup past (about 1 cup)
1 15.5-oz can cannellini or other white beans, rinsed
black pepper
1 10-oz bag spinach, thick stems removed
1 oz Parmesan, grated (about 1/4 cup)
1. Heat the oil in a large saucepan over medium heat. Add the sausage and cook stirring occasionally, until browned, 4 to 5 minutes. Using a slotted spoon, transfer the sausage to a plate.
2. Add the garlic to the pan and cook, stirring, for 1 minute (do not let it brown). Add the wine and simmer, scraping up any brown bits, for 1 minute.
3. Add the broth and pasta and bring to a boil. Reduce heat and simmer until the pasta is just tender, 8 to 10 minutes.
4. Add the beans, sausage and 1/4 tsp pepper and cook until heated through, about 2 minutes. Remove from heat and add the spinach, stirring gently until it begins to wilt. Serve with the Parmesan.

I have a soup recipe that I have been eating lately. It's called "Fat Flush Soup". Don't let that scare you off .""This soup diet is designed to be used for a week at a time and will give you rapid weight loss if you need to lose weight quickly or just jumpstart your new nutrition plan to lose weight and stay healthy.(Their Claim, though my wife did lose 7 pounds in 5 days)

Here is the "Exclusive Fat Flush Soup Recipe" As Reported in Woman's World Magazine
Ingredients
2 tsp. olive oil
1 1/4 lbs. lean ground beef, turkey or shredded chicken
1 onion, chopped
2 cloves garlic, chopped
1 bell pepper, seeded and chopped
8 oz. mushrooms, chopped
1 (14 oz) can crushed tomatoes
1 (32 oz.) bottle reduced-sodium tomato or vegetable cocktail juice
1 Tbs. fresh lemon juice
1 (14 oz.) can beans rinsed and drained
1 Tbs. ground cumin
1/8 tsp. cayenne, or to taste
1/4 cup each fresh cilantro and parsley, chopped
Direction
In a stockpot, heat olive oil over medium-high setting. Saute meat/poultry until cooked through, about 5 minutes. Drain ans set aside.
Saute onion, garlic, peppers, and mushrooms until soft, about 5 minutes.
Stir in remaining ingredients, except cilantro and parsley. Cover and simmer for 20 minutes. Stir in cilantro and parsley.
Cover; simmer 10 minutes longer. Store soup in refrigerator up to 5 days. Freezes well and makes 16 cups. One serving is 3 cups.(NOTE: I did not get this amount following these exact directions. Now I make adding 32oz water and a little extra seasoning)

One of my MFP buddies just sent me this link. I think it looks very good. He said that they used Turkey instead of beef--and put the chili over some of the "healthy" pasta

That sounds yummy. Oven roasting makes vegetables sooo sweet! Just hand-rub with a smidgeon of olive oil before roasting, drizzle with balsamic vinegar at the end? Or were there more ingredients in your recipe?0 -
Cabbage Soup w/Ground Beef 1 Cup
Cabbage 1 medium head cut up
Ground Beef Extra Lean 1 lb
Mushrooms 8 oz sliced
Diced Tomatoes salt free 2 cans
Italian Style Diced Tomatoes 1 can
Bushes Dark Red Kidney Beans 1 Can
Meijer Naturals Medium Salsa 1 jar
sweet onion 1 med
Wyler's sodium free bouillon 3 tsps
Garlic 3 cloves chopped
8 cups water
Olive oil extra virgin 3 tbls
Brown beef in separate pan and drain off grease if any.
In large stock pot cook onions, mushroom, garlic in olive oil until tender.
Add ground beef, tomatoes, beans, salsa and water.
Add cabbage
Bring to a slow boil and simmer until cabbage is tender.
Add salt and pepper to taste.
Add ground hot red peppers if desired.
Serving size: 1 Cup

Reduceheat, and simmer for 30 - 40 minutes or until thickened.

Sugar free Pumpkin Pie
Ingredients:
1 9 inch whole pie shell
3/4 cup sugar substitute
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 whole eggs
1 can pumpkin
1 1/2 cups evaporated skim milk
Directions:
1. Combine sweetener, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar mixture. Gradually stir in evaporated milk. Pour into pie shell.
2. Bake for 15 minutes in preheated 425 degree oven. Reduce temperature to 350 degrees; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack.0 -

4 eggs
34 cup applesauce (unsweetend)
1 cup cereal (kellogs allbran)
2 cups flour (1 cup white and 1 cup wheat)
2 cups sugar substitute (splenda)
2 tsps baking powder
1 tsp baking soda
1 12 tsps cinnamon
12 tsp clove
12 tsp ginger
12 tsp nutmeg
12 tsp allspice
walnut (optional)
2 scoops protein powder (unflavored protein powder optional)
1 Preheat oven to 350 degrees:.
2 In a large bowl, beat eggs until foamy, add pumpkin, apple sauce and cereal and mix. Sift in flour, baking powder, baking soda, salt, spices and splenda and stir to blend. Pour batter into a greased 10" bunt or tube pan.
3 Bake for 1 hour and 10 minute Cool completely before removing from pan.
