Me too, i am clueless & a rubbish cook to boot. I do not exagerate )0

My meals are not 100% clean, but probably 95% (the 5% dirty comes from my bottled marinades or salad dressings).
My favorite meal:
Fresh salmon marinated in teriyaki sauce with a little brown sugar - wrap in foil and bake in oven @ 350 for about 20-25 minutes.
Serve with brown rice, steamed broccoli (naked), and baked sweet potato (only add ground cinnamon)
Nom, nom, nom!!!!0 -
My favorite is broiled ahi tuna with seasoning and a sweet potato or acorn squash.
My new favorite salad dressing is
Olive Oil
Balsamic Vinigrette
spicy brown mustard
I just add them together to taste and viola awesome dressing...I usually start with 2 TBS of EVOO since that has the majority of calories to determine my calorie count for the dressing and slowly add the blasamic and spicy brown mustard to taste...I usually get about 3 servings so the calorie count is usually about 75 calories or so per serving.
I will say if you are going to be eating clean - spend the money and get GOOD olive oil and Balsamic
I also did a great Spagetti Squash the other day -
you need
medium spagetti squash
Trader Joe unsalted Plum Tomato with Basil (if you don't have Trader Joe get a good quiality canned plum tomatoes without added preservatives
garlic
olive oil
veggies of your choice
seasonings of your choice
bake spagetti squash
in a saute pan add some Olive Oil and some minced garlic (I like to do mine fresh - but Doret has some great frozen garlic cubes) - add whatever veggies you like - I usually do baby portobella, zucchini and onion - cut them so they are chunky and saute them until just soft,
in a medium pot dump a can of Trader Joe unsalted plum tomatoes with Basil and using an immersion blender blend it all up - I will add some italian seasoning and some cracks of black pepper and sea salt at this point. place on stove and heat up - when it gets warm add in your sauted veggies.
spoon your sauce over a serving of spagetti squash and enjoy. When I do this I make it 4 servings - so 1/4 of the spagetti squash and a 1/4 of the resulting sauce - easy to refridge and tastes great when heated the next day for lunch.
Also Garlic Lime Shrimp - so easy and sooooo yummy
You need:
30 Shrimp
Garlic
Lime
Cilantro
Olive Oil
optional - grain of your choice - I prefer Quinoa
In a saute pan heat up some olive oil and add crushed/minced garlic - I like alot of garlic so I usually do 4-6 cloves depending on size - saute shrimp until just opaque -add in the juice of one lime - stir -remove from heat - add in cilantro (I usually add about a cup or more cause I like cilantro) - let ciantro warm up a bit (you don't want it totally cooked - just steamed a bit to release flavor)
Eat by itself or spoon over a serving of grains - brown rice, quinoa, etc...
I use 10 shrimp as a serving size - so when I make it there is a serving for both my husband and I and one to take for lunch the next day -
Check out Clean Eating Magazine - tons and tons of really great recipies - you just have to wade through depending on what your eating style is - higher protien/lower carb - higher carb/lower protien
you can also check out skinnytaste.com - some of the recipes may not be full on "clean" but there are a lot (that is where I got the garlic lime shrimp) that are or can be slightly adjusted0 -
Just in general speaking...I love soup because you can fill it with healhty veggies and go 'bananas" and it still tastes good! I like Tosca's cookbooks as a guide but some of her recipes have loooooooong list of items. I also have a cookbook htat is 5 ingredients and it is fabulous.0

I like reading Clean Eating magazine for ideas, as well as Tosca Reno's cookbooks.
I love homemade stuffed chicken breast (with non-modified feta cheese, fresh red peppers, organic olives/olive oil, panko), side of organic brown rice and steamed broccoli on the side.
Yummerssssss
I'm in love with certain organic fruits and veggies. I find they taste sweeter than the chemically sprayed produce.
Also, I'd take a fresh fruit salad over a slice of cake any day!!0 -
I already posted this earlier, just thought I'd share it here! Just started me clean eating journey and these recipes will certainly help!
Been making real yummy scrambled eggs! Heres a pic of what I made today
2 eggs
2 cups baby spinach
1/4 cup diced red peppers
1 piece diced garlic
1/4 diced onions
1 piece healthy ones honey ham
1 piece reduced fat american cheese
1/4 cup dice tomatoes
I saute the peppers, onions and garlic first. Then add the ham and tomatoes for a few seconds to warm it up. Next throw in the spinach and cook just till they begin to wilt. Then finally you add the eggs and scramble away! I also put pepper on to taste at the end.0 -

I haven't tried it yet, but it ticks the boxes and I love curry flavours.0 -
My absolute favorite is a Green Breakfast Smoothie that I eat almost every day - Protein Powder, Unsweetened Almond Milk, Spinach, and 1/2 an Orange - sometimes I throw my supplements in it too. It's so good!
I also love a fruit cup made with Strawberries and Red Grapes.0 -
Tuna mixed with homemade hummus served on a baked sweet potato with fresh greens and red pepper.
&
A 'summer' quiona (fresh fruit such as mango, beetroots, veggies in an olive oil n lemon dressing) the quinona really absorbs it. I either add in Tofu or Steamed Fish.0
