Salsa can be a bit high in sodium, but it's marvelously low calorie and quite healthy with all the fresh tomatoes. There's nothing like fresh made salsa.
While fried tortilla chips aren't so good for you, salsa is great on lots of other things, like vegetables, fish, omelettes, etc.
Salsa picante
makes about 1 qt.
3 lbs. plum tomatoes
3 serrano chiles
1 yellow onion
1/2 cup cilantro leaves
juice of one lime, with pulp, about 1/4 cup
2 tsp. salt or to taste
sugar, if tomatoes are not sweet (optional - about 2 tsp.)
Halve the tomatoes, remove the stems/cores, and scoop out seeds/membranes. Dice the flesh (leave skin on).
Dice chiles (with seeds), onion, and cilantro leaves and combine.
Add salt and check for sugar.
Nutrition per 1/4 cup serving:
25 calories, 5 g carbs (3 sugar/2 fiber), 1.7 g protein, 0.2 g fat, 0 g cholesterol
